I understand that we must pay tax/gratuity out of pocket on the free dining plan.
Do we need to carry cash for that, or can we charge to room?

You just have to pay gratuity and it can be charged to your room using your KTTW card or it can be cash. You don't have to pay the taxes on the meals, its included in the plan.
