Won't marinades get lost in the oil? Any simple breading recipes...?

More like a brine rather than a thick marinade. Seasoned flour is probably best. But the key is to let the wings set before frying otherwise the flour will just fall off.

And what's the secret to fries? I've only made frozen fries in my deep fryer, I've read you have to twice fry fresh cut potatoes...
 

Snow wasn't bad this morning when school busses were cancelled, but it hasn't stopped, and NOW it looks like hell out there....


We've had lots and lots of rain over the last 36 hours. Many roads around the province were washed out and a number of people have flooded basements.

Fry potatoes until you can pinch them and they feel kinda soft, about 3-4 minutes. Then put them aside until you are ready to fry them for dinner. They should be crispy on the outside and light and fluffy in the middle.
 
Awww, deep fryers! The BEST. I refuse to buy one b\c I would deep fry EVERYTHING. My mom used to have a fry daddy when I was little. I remember the smell and the sound of the oil so vividly.

I've got the one with the basket. I use it rarely, but when I start frying, I want to fry everything. So good.

Although I remember ours having a wire mesh frying basket. I'm actually surprised that we never burned the house down.

Try having 3 commercial fryers and two pressure fryers at your fingertips....then have a salad that your wife made us for lunch.
