I have seen reference a few times that you can watch the theater shows on your stateroom television. Is this a recorded show that you can watch at any time? Or, is it only offered during the time the show is going and shown live?

The shows are pre-recorded, so the cast is not the same one that's on your cruise.
In our experience, the shows are shown on the day that each particular show is done in the theatre. So, for example, you can't see (on the Magic) Twice Charmed on a day that the show that night is Villains Tonight.
We watched one of the shows that way our first night of our last cruise. We were wiped out from a really rough trip and it was lovely hanging out in the cabin, watching the show, eating cookies from room service!
