I have two date bar recipes that I found on boxes of Dromedary dates. One is dated 1986 & the other 1991, & I still use them. Maybe one of these recipes will help.
NEW ORLEANS DATE BARS
6 tbsp. butter/margarine
3/4 c. brown sugar
2 eggs
1.5 c. flour
1.5 tsp. baking powder
1/4 tsp. cinnamon
1/4 tsp. salt
1/4 c. milk
1 - 8 oz. package dates
3/4 c. chopped nuts
confectionary sugar
Beat first two ingredients until creamy. Add eggs & beat until blended. Combine next four ingredients. Stir alternately with milk into sugar mixture. Blend in dates & nuts. Spread in a greased 9"x9"X2" baking pan. Bake in a preheated oven 350 degrees for about 35 minutes or until done. Cool. Dust with conf. sugar.
CLASSIC DATE BARS
8 oz. chopped dates
1/2 c. water
1.5 tsp. vanilla
1.5 c. quick cooking oats
1.5 c. flour
1 c. brown sugar
3/4 tsp. baking soda
3/4 c. melted margarine
1/2 c. chopped nuts
Combine dates & water in saucepan. Bring to a boil over medium heat. Reduce to low & simmer, stirring occassionally, for 3-4 minutes until thickened. Remove from heat & stir in vanilla. Reserve.
Combine oats, flour, brown sugar & baking soda. Mix well. Stir in butter. Spread 2.5 cups of oat mixture in bottom of 9" square pan. Press gently to make firm crust. Top with date filling. Combine nuts with remaining oat mixture. Sprinkle over date filling, pressing gently into filling.
Bake 350 degrees for 25 minutes.
