We've been doing the holidays at WDW since 2010. Things have changed but it's always beautiful. One suggestion, something we always enjoy, is wear holiday clothing! It's just a bit more fun that way.
Magic Kingdom - A great to be on Main Street is the afternoon, after the parade. Many people are leaving for their naps, and you can take in all the decorations slowly, see the Dapper Dans, Philharmonic, possibly Street Performers. Take the time to look at all the shop windows, go into each shop, etc.
Also like others have said, stay after the fireworks and slowly look at all the lit decorations.
I also agree that the hotels are not worth the effort unless you're planning a rest day and want to see their decorations. To us, going to a resort for a meal and also seeing decorations is good enough.
Epcot has a lot of decorations too, some great photo ops in Future World too.
DHS not as much, especially since Osborne Lights are gone, but the shop windows are cool.
It's a good thing you can't do it all. Makes it easier to justify the next trip!
