Time is money and spending less is budget related - so.....

There's a recipe thread out there, but I wanted one that catered to crock pots.

I have a crock pot and never use it and I want to. I work so I know that those kinds of recipes would be great to have.

My family is very picky - so it's hard to come up with new and exciting things. I plan on taking the recipes from here and making a file on my computer to have as a little cookbook of sorts.

I welcome any ideas!!!
 
I am a crock pot fanatic! I am using mine right now.

We are having shredded pork tacos tonight. VERY easy and super yummy!

1 3/4 to 2lb. Pork Loin (center cut)
1 Jar Pace Picante Sauce (16oz. I use the "medium" spice level)
1 Can Ortega Diced Green Chilies (4oz.)
Spinkle of Onion Salt

Put everything in the crock pot and set to low for 8-10 hours. I always go 10 hours because I usually cook this while I am at work. 1/2 hour to an hour before we are going to eat I shred the pork with two forks and let it sit and soak up the salsa. I serve this on small flour tortillas with shredded cheese and sour cream. YUMMY!
 
BEANS & RICE:

1lb. Pinto Beans

2 Cups Water
1/2 Bag Frozen Chopped Onion
1/2 Bag Frozen Chopped Green Bell Pepper
2 Tbsp. Chili Powder
1 tsp. Pepper
1 1/2 tsp. Salt
2 tsp. Minced Garlic
1/4 tsp. Cumin
1/4 tsp. Dried Oregano
Sprinkle of Red Pepper (use more if you like things spicy)
Ham (I use 3 ham steaks cut up into bite size pieces)

Soak beans overnight in big bowl of water. Rinse. Place in big pot, cover with water and cook on the stove top for 30 minutes. While they are on the stove, put all the other ingredients into a 6 qt. slow cooker. Rinse the beans again and add to the slow cooker and stir everything together really good. Cook on low for 8 to 10 hours or on high for 5 to 6 hours.

Serve over rice with butter. mmmmmmm.......
 

CHICKEN JAMBALAYA

1-2lbs. Boneless/Skinless Chicken Thighs
2 stalks Celery
1 med. Green bell pepper, cut into 1 inch pieces
1 med. Onion, chopped
2 cloves Minced garlic
1 can 28 oz. Crushed tomatoes, with liquid
1 Tbsp. White sugar
½ tsp. Salt
½ tsp. Dried Italian seasoning
¼ tsp. Cayenne pepper
1 Bay leaf
1 cup Uncooked orzo pasta


In a slow cooker, mix chicken, celery, green bell pepper, onion, garlic, tomatoes with liquid, sugar, salt, italian seasoning, cayenne pepper and bay leaf. Cover and cook on low 7 to 9 hours.

Remove bay leaf from the chicken mixture and stir in orzo. Increase heat to High. Cook 20 minutes, until orzo is tender.
 
2 pounds stew meat
1 pouch dry onion soup mix
1 can cream mushroom soup
2 cups water

Low for 6-8 hours. Serve over egg noodles or white rice. I add sour cream to mine about 20 minutes before it's ready.
 
A friend gave me this recipe for steak fajitas (my husband & I love it!):

Slice (raw) steak into thin strips & marinate overnight in a ziplock bag.

Marinade: lime juice, cumin, salt & pepper, garlic salt

When you're ready to cook, pour all into crockpot. Add onion slices (if you don't like onions, substitute a bit of onion powder) and hot pepper. Add about 1/8 cup of water (not TOO much, you don't want the steak to get soupy). Cover crockpot with aluminum foil, then put on lid. Cook on low until done. If you have more time, cook on "keep warm" setting. Usually on low it only takes about 2 hours to finish.

Dish & serve! Enjoy!


Pot Roast

I always end up cooking this for church dinners & it gets rave reviews! Keep in mind, by this recipe, it'll be ready for lunch if started right before bed, or for dinner if you put it on before leaving for work.

Need: 1 boneless sirloin tip roast, lemon juice, lime juice, garlic salt, salt & pepper, creole seasoning.

Add juices & sprinkle some of all seasonings to bottom. Should be enough juice to ALMOST cover bottom. Add roast. Add a little of both juices to top of roast. Sprinkle more of all seasonings to top. Cover with aluminum foil & add lid. Turn on "keep warm" setting. Once you're up in the morning (or about an hour and a half before serving), peel a couple of potatoes & carrots & add to crockpot. Cook until done. Serve & enjoy!!

Keep in mind for both of these recipes, there will be PLENTY of liquid when cooking -- fajitas & roast should be more than juicy & tender! :-)
 
Beef Brisket
16 oz bottle of coke
1 medium onion coarsely chopped
16 oz bottle of your favorite BBQ sauce
Salt and pepper

In crock pot place half of the onion and half of the coke. Sprinkle brisket with salt and pepper on both sides. Add the rest of the onion and coke. Cook on low for 10 hours or high for 6 hours.
Drain and remove onion. Shread the beef, return it to the crockpot and add the BBQ sauce simmer on low for about an hour and serve on soft rolls. If you like it really saucy you may want to add more BBQ sauce.

Subbing!

We had pulled pork sandwiches last night. Pork, 1 c water, chopped onion, worcheshire (sp?) sauce, liquid smoke, salt, pepper, garlic. Cook all day. Shred up meat and dump out juice, then throw back into crock with your fav bbq sauc. Yummy!
 
Chicken Stroganoff

4 chicken breasts (I usually use frozen)
1 can cr of chicken soup
1 sm carton sour cream
1 envelope onion soup

Place chicken on bottom of pot, mix other ingredients pour on top.pour a little water on top. Cover and cook on low about 6 hours.

Serve over egg noodles.

This is SO good! My picky kids even eat it!!!
 
We do the pulled pork all the time too. I don't put anything but the Boston Butt in there, and cook on low all day. Then drain, shred, return to pot and mix in Johnny Harris bbq sauce. Always gets a thumbs up.

Also, at the grocery store in the "packets" section, you can get seasoning mixes with recipes on them for all sorts of crockpot meals. We like the pot roast, stroganoff, and beef stew ones especially.

French Dip Sandwiches

CATEGORY: Main Dish
METHOD: Slow Cooker
TIME: Prep: 30 min. Cook: 7 hours + standing
Ingredients:
2 large onions, cut into 1/4-inch slices
1/4 cup butter, cubed
1 beef bottom round roast (3 to 4 pounds)
5 cups water
1/2 cup soy sauce
1 envelope onion soup mix
1-1/2 teaspoons browning sauce, optional
1 garlic clove, minced
12 to 14 French rolls, split
1 cup (4 ounces) shredded Swiss cheese
Directions:
In a large skillet, saute onions in butter until tender; transfer to a 5-qt. slow cooker. Cut the roast in half; place over onions.
In a large bowl, combine the water, soy sauce, soup mix, browning sauce if desired and garlic; pour over roast. Cover and cook on low for 7-9 hours or until the meat is tender.
Remove roast with a slotted spoon and let stand for 15 minutes. Thinly slice meat across the grain. Place on rolls; sprinkle with Swiss cheese. Broil 3 to 4 in. from the heat for 1 minute or until the cheese is melted. Skim fat from juices; strain and serve as a dipping sauce. Yield: 12-14 servings.
 
If you are looking to come home and make a great cooked meal, one idea that I did before my baby was due, is when I bought my frozen meats (chicken, ground beef, etc.) I cooked it all up at once and froze it cooked. I put the pork chops or london broil in the crock pot over night, I baked all my chicken with italian dressing and some spices, & I fried all my ground beef, and put it in 1-1 1/2 lb bags in the freezer. It seems to last longer and all I have to do is nuke it for a minute or two. Yeh, even the ground beef! It doesn't work too well with meatloaf though. It cut my lasagna prep time from an hour down to 15 min once I discovered this and the no boil noodles! :yay:


Also, something I discovered since we've been on a dental floss budget :laughing: , is that sausage in the 1 lb roll seems to be extremely cheaper than 1 lb of ground beef. So I've been substituting that into my spaghetti/lasagna/italian dishes...and it seems to taste better. :love:
