Crockpot recipes please!

This is more of a time budget request lol. I get home late so use my crockpot four days a week and I get sick of making the same old things! Help!

I get frustrated with Crockpot Recipes though, because most say cook on High 4 hours or Low 8 hours.
I'm usually gone more than 8 hours during the day.... So I am looking for recipes that can hold up to more like 10-12 hours in the CP.
I'd love to hear if anyone has ideas for that! :)

It is supposed to cook for 9 hours, shred then an additional 1 hour.
 
I'm doing pulled pork in mine today. I do a dry rub on the meat and add 1/2 cup of red wine. Cook on high for 4 hour or low for eight. Shred the meat and serve on hamburger buns with a side salad. Makes an easy meal.

Great thread, let me throw you a curveball; How about vegan recipes? Both of my HS kids have decided they are vegetarian/vegan - usually doesn't lend itself to Crockpot meals.
 
I've got a low-sodium, lean chili in my crock at the moment.
Will serve with corn bread.
I will try the chicken chili in the post above next week!
 
Great thread, let me throw you a curveball; How about vegan recipes? Both of my HS kids have decided they are vegetarian/vegan - usually doesn't lend itself to Crockpot meals.

Fill a crockpot with veg to the top - any type - and throw in a jar of Patak's Jalfrezi Curry sauce or Rogan Josh sauce (if you like heat - RG is hot - both vegan) and a can of coconut milk and some salt and pepper. Cook on low for awhile, depending on the veg. Add a cornstarch slurry (water/cornstarch) once it's mostly cooked. Serve over rice (and sprinkle on some nuts that match the sauce and your chosen veg if you want crunch).

You can also make lentils with the veg the same way - you just need to add enough water to make sure the lentils hydrate on top of the jar of sauce and can of coconut milk...
 
I make chicken tacos weekly in the crock pot

2 pounds boneless skinless chicken breasts
1 jar of favorite salsa
1/3 cup taco seasoning

Use frozen breasts and cook on low for 8 hours, 4-5 hours if thawed.

Shred and then use what toppings for burritos or tacos that your family likes. Serve with spanish rice and corn.

super easy crockpot trick-get the disposable liners, set up either the cheapest pork or beef roast in it and use the dr pepper method to cook (any soda works-i use diet coke, it's basically pour it over and cook the roast). when the roast is done, lift it out of the crockpot, let the liner cool, knot the top of the liner and toss it (that way you are tossing all the shed off fat/liquid vs. mixing it into whatever you add as a sauce). if you want to use the entire roast for bbq-shred the meat, add bbq sauce and let simmer a few in the crock/for easy italian-same but add marinara, easy enchiladas-same, add enchilada sauce. dd has done this method but frozen up ziplocks of plain shredded meat to pull out and defrost in her fridge overnite to use another night for whatever meal she's throwing together (most often pasta w/'pot roast').

if you like beans-check out the websites for the companies you buy dry beans from, many will have the crockpot recipies on there vs. on the bags (same for some dry soups).

check out yummly-they've got a ton of vegetarian. you can pick and choose ingredients to eliminate likes/dislikes/allergies/use what you've got on hand.

when my kids attended schools that only permitted vegan/vegetarian foods on campus and i had to provide for potlucks and such i found that i could use most recipies that called for ground beef and just substitute morningstar farms griller's crumbles. it's the same consistency as ground beef.
