check out the yummly site-great crockpot recipies (the stuffed pepper soup is fantastic).
super easy crockpot trick-get the disposable liners, set up either the cheapest pork or beef roast in it and use the dr pepper method to cook (any soda works-i use diet coke, it's basically pour it over and cook the roast). when the roast is done, lift it out of the crockpot, let the liner cool, knot the top of the liner and toss it (that way you are tossing all the shed off fat/liquid vs. mixing it into whatever you add as a sauce). if you want to use the entire roast for bbq-shred the meat, add bbq sauce and let simmer a few in the crock/for easy italian-same but add marinara, easy enchiladas-same, add enchilada sauce. dd has done this method but frozen up ziplocks of plain shredded meat to pull out and defrost in her fridge overnite to use another night for whatever meal she's throwing together (most often pasta w/'pot roast').
if you like beans-check out the websites for the companies you buy dry beans from, many will have the crockpot recipies on there vs. on the bags (same for some dry soups).
Great thread, let me throw you a curveball; How about vegan recipes? Both of my HS kids have decided they are vegetarian/vegan - usually doesn't lend itself to Crockpot meals
check out yummly-they've got a ton of vegetarian. you can pick and choose ingredients to eliminate likes/dislikes/allergies/use what you've got on hand.
when my kids attended schools that only permitted vegan/vegetarian foods on campus and i had to provide for potlucks and such i found that i could use most recipies that called for ground beef and just substitute morningstar farms griller's crumbles. it's the same consistency as ground beef.
