White Bean Chicken Chili - I always make this dish with leftover mojo chicken. I use a mojo marinade for the chicken, letting it marinade over night, then roast for dinner the next day. I do cook extra so that I will have a lot of chicken for my crock pot meal. My family prefers shredded up chicken in this recipe, so I de-bone and take off any skin or fat and re-season the meat, with adobe seasoning, salt, pepper...letting it sit in the frig if possible overnight..... Into the Crock Pot - goes some chicken stock, white wine whatever I have on hand works, the juice of half a small lemon... In goes the chicken, chopped celery, carrots, onions, garlic to taste, 1 can of white corn, 1 can of the crisp summer corn in a can, a couple of cans of white beans whatever I have on hand rinse well before adding into the pot. I wait and let it get going before adding any more seasoning, about a hour, then taste to see what it needs...
I serve it with shredded cheese, green onions, and some tortilla chips. If you need it to go further or making for a crowd. You can make some yellow rice and spoon the chili over it.
