Crock Pot Recipes


I like the beef roast recipes because chicken gets so dry in my crockpot. Any recipes for other than poultry main dishes?
 
Today, I just made a pork, onion, and apple dish. I'd say there was a recipe, but there wasn't...but I put it in at midnight, shredded it at noon, and left it on low then keep warm til needed (it was probably done at 9-10am, but extra cooking didn't hurt)...It was...
7lb pork shoulder - deskinned/defatted (so it was like 5lbs) - I left the bone in
2 large sliced onions on the bottom
1 onion soup mix
1 cup apple cider
salt/pepper

Once it was cooked, I separated the meat and shredded it while I froze the broth to degrease it. While it was freezing, I added about another 1/2 cup of cider to the pork to keep it moist (while it was on keep warm). I then degreased the broth, added it back, and added a cornstarch slurry to thicken it (2-3TB of cornstarch got me where I wanted - you may need more or less, depending if you add back all the broth or not)...and left it on low to rewarm up the broth and served it a few hours later...

I served it over mashed potatoes (with homemade fresh blueberry/blackberry muffins and sliced cucumbers/baby carrots with dip) and it was great...I had 3 teens (2 not mine), 3 kids, and my spouse all declare it great and a nice fall change. It doesn't taste appley, oniony, or even particularly porky...it just tastes really meaty with a fallish flavor:)...and it fed all of the above, with leftovers for probably 3-4...
 
We love Mojo Pork - and the best part is, we got the recipe at the Epcot Food and Wine Festival! They serve this at the Caribbean booth, if memory serves. Awesome over brown rice with black beans, pico de gallo and some guacamole!

I just throw in meats of all kind and let them cook all day and serve with all kinds of sides.

Whole chicken with lemons inside and butter on it. I love my crockpot.
 
We did an early thanksgiving dinner yesterday. I roasted a whole turkey in the oven, and cooked a turkey breast in a crockpot with some chicken stock.

The white meat from the crockpot was so much better (moister and more tender) than the roasted breast meat.

It was a 6+pound breast with skin and bones. I put 2 c of chicken broth in, but did not baste.

I did not time it - just took it out when it reached 170 degrees. My dh then put it under broiler for about 5 minutes to crisp up the skin.

I cooked it on low. It did not take all day. I was kind of surprised that it was done the first time we checked it.
