Happy 1 November. Today is it raining and colder but I had to get out on my bike. I was thinking what to make for dinner and with the weather Crock Pot all the way.

What is your favourite recipe for the slow cooker?

I also make carnitas in the slow cooker with coca cola. I don't have the exact recipe with me, but there are a bunch online. After it cooks in the slow cooker, I shred the pork on a sheet pan and crisp it up in the oven

Salsa chicken
Place 4 chicken breasts in a slow cooker, seasons with salt and pepper, and cover with 2 cups salsa (I use Pioneer Woman recipe, but you could use store bought). Toss until the chicken is covered.

Cover and cook on high for 4 hours (or low for 6-8 hours), or until the chicken shreds easily with a fork. Shred the chicken in the slow cooker and toss with the remaining salsa and juices until well-mixed. Serve immediately, or refrigerate in an airtight container for up to 5 days. (This chicken also freezes well.)

Lots of things that aren't stews or soups don't work well for me because I tend to be gone from the house a long time and then the meat tastes like boiled meat.

I take a whole chicken and put lemons in it and butter or some olive oil and let slow cook all day. Serve salad and maybe some garlic bread.

Thank you, I am ready to go to market and get the goods. The weekend looks cold and damp so it is time to make comfort food the easy way.
 
One of the simplest yet tastiest is 4-6 frozen boneless skinless chicken breasts (we buy the 10 pound bag from Costco) covered with a jar of your favorite marinara sauce. Cook on low for about 8 hours. Serve over pasta, rice or mashed potatoes. I also make a version of the salsa chicken except we add two cans of rinsed and drained black beans about half way through the cooking time. There is an easy version of chicken and dumplings made with frozen boneless chicken breasts, a jar of Heinz fat-free chicken gravy and a bag of frozen mixed vegetables. About an hour before dinner, cut up some cheap canned biscuits into quarters and lay on top of the chicken and vegetables. Turn the crockpot to high and "bake" covered until the biscuits are cooked through and browned.
 
I also make potato soup in the crockpot. Super easy.

1 bag frozen diced hash browns
1 32 oz. box chicken broth
1 15 oz can cream of chicken soup
1 8 oz block cream cheese.

Put it all in the crock pot, cook on low for 6 hours. Before serving use a whisk to blend the cream cheese. Serve with toppings like bacon, cheese, croutons.
 
Today's what is in the fridge crock pot meal. Huge boneless chicken breast, can of about to expire cream of chicken soup, 2 lbs of carrots, and some celery. The weird part is it will be served over left over baked potatoes in the fridge.
 
My crockpot is going right now. I cut up beef steaks yesterday into cubes and marinated it overnight with beef broth, red wine, McCormick Montreal steak seasoning, Worcestershire, and minced garlic. I put it in the crockpot with sliced yellow onions and will add fresh mushrooms later. I'll make gravy out of the liquid and it will be served over rice or egg noodles for dinner.
 
Cabbage rolls are always a hit. Steam the cabbage til pliable.

In a big bowl mix 1# ground beef, 1 # Italian sausage, some garlic powder, and raw minute rice (brown or white). I eyeball it.

Make bigger meatballs out of it, roll in a cabbage leaf, and put seam side down in a crockpot. After all that is done, in a bowl mix 1 can of v-8 or tomato juice with some worchestershire, garlic, pepper, onion powder, and I like caraway. Pour over the leaves in the crockpot. Cook all day. Saurkraut is really good on this, too, but my kids are not a fan so I serve it on the side.
 
White Bean Chicken Chili - I always make this dish with leftover mojo chicken. I use a mojo marinade for the chicken, letting it marinade over night, then roast for dinner the next day. I do cook extra so that I will have a lot of chicken for my crock pot meal. My family prefers shredded up chicken in this recipe, so I de-bone and take off any skin or fat and re-season the meat, with adobe seasoning, salt, pepper...letting it sit in the frig if possible overnight..... Into the Crock Pot - goes some chicken stock, white wine whatever I have on hand works, the juice of half a small lemon... In goes the chicken, chopped celery, carrots, onions, garlic to taste, 1 can of white corn, 1 can of the crisp summer corn in a can, a couple of cans of white beans whatever I have on hand rinse well before adding into the pot. I wait and let it get going before adding any more seasoning, about a hour, then taste to see what it needs...

I serve it with shredded cheese, green onions, and some tortilla chips. If you need it to go further or making for a crowd. You can make some yellow rice and spoon the chili over it.
