Crock pot recipes for WDW vacations

I have a garlic/lemon chicken in the crock pot. I am going to add fresh broccoli and pasta after it's almost done cooking..for a chicken rigatoni dish. I hope it turns out well...I've been craving chicken n' broccoli for some reason :)
 
Kohl's has a $5 (those Kohl's Care things) Crock Pot recipe book, wonder if it's any good.
 
DD12 put some chicken breasts in our crock pot today, seasoned with a little garlic salt and cooked in sweet & spicy BBQ sauce. I can't wait to eat it! I have no idea what I'll make to go with it but it's going to be good!

I decided to do pork chops and scalloped potatoes in the crock pot yesterday. I usually fry the pork chops and bake the potatoes in the oven, but tried them both together.

It was actually REALLY good! I noticed a lot of previous posters noted that the pork was dry, so here is what I did. I made a sauce separately..this included a small can of cheddar cheese soup and a large (family size) can of cream of mushroom soup. I mixed this with about a small can of milk.

I put sauce in the bottom then potatoes then sauce. Then 2 pork chops, then potatoes then sauce. Then another pork chop and another layer of potatoes and covered with remaining sauce. There seemed to be an enormous amount of sauce but I used it all.

We were at the pool all day and night so it was on low for approx 9 hours. The pork was tender not tough at all, and the potatoes were still keeping their form..not mush. I think the secret to this recipe is a long cooking time, which will be perfect for those long WDW days.

Next time I will omit the pork chops all together and just use ham steaks for the protein. If I did use the pork chops again, I'd dice up the pieces instead of using the whole chops. I think that would help the "tenderness factor"

All in all a successful recipe that is definitely going to be used in WDW :)
 
I make pulled pork sandwiches. Put pork loin roast in crockpot with 12oz. can of root beer. Cook 6-7 hours on low. Drain out liquid, shred roast. Add bottle of favorite BBQ sauce, we like Sweet Baby Rays, mix well. Serve on bulkie rolls with a salad or cole slaw.

I did this yesterday and it was so easy and turned out so good! Thank you!!

I cook the pork with 1/2 bottle of BBQ sauce in the crockpot for 8 hrs on low, then drain the liquid, shred the pork and add more BBQ sauce along with a splash of apple cider vinegar. My kids ♥love♥ this on the tiny Martin's Potato rolls. (They're about 2" square - slider-sized.) I usually add some cole slaw on top, but they prefer the pork itself.
 
Came across 2 more recipes I'm excited to try!

Taco Casserole
1lb ground beef
1 c salsa
1/2 cup mayo + 2tsp chili powder
2 cups crushed tortilla chips (divided)
2 c shredded colby/jack cheese
diced tomatoes
shredded lettuce
Sour cream

Brown beef, drain. Add salsa, mayo mixture & chili powder, mix well. In greased crock pot, layer 1/2 meat and 1/2 chips...repeat. Top with additional grated cheese if desired. Cook on low 2-3 hours or until heated through. Top with lettuce, tomatoes & Sour cream if desired. (I might add pinto or refried beans with the meat mixture)


Crock Pot Pizza
1 1/2lbs ground beef
1cup chopped onion
8oz rigatoni noodles (cooked)
1 green bell pepper, chopped
3 oz sliced pepperoni
16oz jar pizza/spaghetti sauce
8oz each shredded mozzarella/Cheddar

Brown ground beef & onion, drain. Cook rigatoni according to package directions (leaving more al dente). Layer half of each in greased crock pot. Beef, bell pepper, rigatoni, pepperoni, pizza sauce, both cheeses. Repeat layers. Cover & cook on low 3-4 hours. Ensure pasta is covered with sauce for proper cooking.

(I would probably add crumbled sausage to this too)
 
I have 3 that my family loves:

Hawaiian Chicken in the Crock Pot

4 chicken breasts (we have also used other cuts of chicken with great success)
1 bottle of your favorite BBQ sauce
1 can of pineapple rings, with juice

Place the chicken on the bottom of the crock pot. Pour the BBQ sauce evenly over the chicken. Place the pineapple rings on top of the chicken, spacing them out how you see fit. Then you want to pour the pineapple juice over the chicken. (Actually, what I do is pour the pineapple juice into the BBQ sauce bottle, put the lid back on, and shake it up really good to get all of that BBQ sauce out of the bottle before I pour the juice onto the pineapple. )

Cook chicken on high for 4 hours or low for 6 to 8 hours.


Crock-pot Chicken W/ Blackbeans and Cream Cheese...yum!

I love this recipe for two reasons...one...my family loves it and two because it is so easy to make!

4-5 boneless chicken breasts
1 (15 1/2 ounce) can blackbeans
1 (15 ounce) can corn
1 (15 ounce) jar salsa, any kind
1 (8 ounce) package cream cheese

4 servings

1. Take 4-5 frozen, yes, frozen, boneless chicken breasts put into
crock-pot.

2. add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn
drained.

3. Keep in crock-pot on high for about 4-5 hours or until chicken
is cooked.

4. Add 1 package of cream cheese (just throw it on top!) and let
sit for about 1/2 hour.

5. All done and enjoy!

4 hours 3 minutes 3 mins prep - serve over rice


And then also a Chicken & Stuffing type one. I put chicken breasts on the bottom, I usually use 6, then a can of cream of chicken soup and a can of cream of mushroom soup (or I use a substitute sometimes but on vacation, can't really do that) layered on top of the chicken. Then I take two boxes of stove top and you mix it with the water amount listed on the packages (you can add the butter they suggest, too) and put that on top. Cook on high for 4 hours of low for 6-8.

Tried the chicken with black beans recipe. It was delicious! DH usually doesn't like black beans but he loved it too. A new favorite yummy easy recipe. I just wanted to say thank you to the OP. (makes great leftovers too) :thumbsup2

Crock pots are great for fondues too - chocolate or cheese on the balcony... mmm....
 
Here is one I got from a friend yesterday - I havent tried it but I plan to very soon.

2 lbs potatoes - peeled and cubed
2 cans beans with sauce (pinto or pork n beans would work)
1 lb stew meat, raw
1 lb package baby carrots
1 c water
1/4 c BBQ sauce
1 1/2 c frozen peas

Put everything in the crockpot except peas. Add peas when there is one hour left of cooking time. Cook on high 4-5 hrs or on low 7-8 hrs.

Potatoes
Smoked Sausage

The smoked sausage seasons it so well you don't need anything else, except maybe some salt. I usually do 2 cans green beans, a few potatoes- peeled and cut into a few pieces, and half pound of smoked sausage. My husband loves this. I really like the beans and potatoes and he eats the meat.

This sounds very tasty.

How do you layer it, or do you mix everything together? And do you add any liquids at all?

DH and I were reading this over and he suggested maybe buying those packages of cubed ham that you can get in the breakfast meat aisle with the bacon and using that for the protein. That would make it easier to dish up.

All in all though, sounds very tasty!
 
I have one that's my go-to crowd recipe. Buffalo Chicken Sandwiches:

-1 big bag of frozen chicken breasts
-1 bottle of hot sauce (I like Franks Red Hot but whatever you want)
-1 pkg dry ranch dressing mix

Put all of these in the crockpot & cook all day. I usually start mine on high for an hour or so & then set it on low for the rest of the day. Mid-day I'll take the lid off & do a good shred of the chicken, then let it cook until dinner time. We serve it on rolls topped with cheese & Blue Cheese dressing. It's flavorful but not really spicy.

We also love Beer Brats. Bratwurst (I do 2 packages worth) browned in a skillet & then you put them in the crockpot & pour a bottle of good German beer over them. I usually go to our local World Market & buy a single bottle of a good dark beer. I do the high & then low thing and they are AMAZING!! My kids love them.

Finally, I can't link on my phone but there's a recipe on All Recipes for Slow Cooker Italian Beef. It's a bunch of spices & a pkg of Italian salad dressing mix brought to a boil in a few cups of water & then poured over a roast in a crockpot. Cook all day & then shred. I make this sometimes & use small Hawaiian buns for 'sliders' but we usually just use hamburger buns. You could measure out the spices before you leave & put them in a Baggie to just dump into the water the morning you're going to fix it.

I've been watching this thread, not for cooking at WDW but just for cooking in this heat! I found better recipes on here than the Betty Crocker site!!! I'm trying the chicken with bbq and pineapple tomorrow. I like one meal dishes where I don't have to do sides as well. But DH gets tried of the same things and I'm running out of ideas.

Yay!!! I agree with you. The recipes on here really are great! And with this crazy heat it's definitely crock pot cooking time!
