Crock pot recipes for WDW vacations

I have one that's my go-to crowd recipe. Buffalo Chicken Sandwiches:

-1 big bag of frozen chicken breasts
-1 bottle of hot sauce (I like Franks Red Hot but whatever you want)
-1 pkg dry ranch dressing mix

Put all of these in the crockpot & cook all day. I usually start mine on high for an hour or so & then set it on low for the rest of the day. Mid-day I'll take the lid off & do a good shred of the chicken, then let it cook until dinner time. We serve it on rolls topped with cheese & Blue Cheese dressing. It's flavorful but not really spicy.

We also love Beer Brats. Bratwurst (I do 2 packages worth) browned in a skillet & then you put them in the crockpot & pour a bottle of good German beer over them. I usually go to our local World Market & buy a single bottle of a good dark beer. I do the high & then low thing and they are AMAZING!! My kids love them.

Finally, I can't link on my phone but there's a recipe on All Recipes for Slow Cooker Italian Beef. It's a bunch of spices & a pkg of Italian salad dressing mix brought to a boil in a few cups of water & then poured over a roast in a crockpot. Cook all day & then shred. I make this sometimes & use small Hawaiian buns for 'sliders' but we usually just use hamburger buns. You could measure out the spices before you leave & put them in a Baggie to just dump into the water the morning you're going to fix it.

How many pounds of chicken breasts do you use? Sounds yummy.

I just use one of those large bags of individually frozen chicken breasts. The ones that run around $10 at most grocery stores.

Thanks to everyone contributing to this thread. Since I started reading it we have been using our crockpot more and more. It really is nice not heating up the house with the oven and/or stove in the summer. It is also really encouraging me to clean out our upright freezer which deseperately needs defrosted! I'm famous for stockpiling when there is a good deal (especially on meats) but then never getting around to cooking them up! We have a local store that often has great deals on chicken breast tenderloins so I have been using them for so many of the chicken dishes.

So far we have tried:

Chicken w/BBQ sauce and pineapple (DH & I liked it more than the kids did)

Chicken with black beans (It was good but too much - we would make it more for a party or tailgating event in the future)

Pulled Pork w/Root Beer (This was excellent although next time I am going to use a different root beer or soda. We used bone-in pork shoulder steaks that were on sale at Aldi's. They worked perfectly and barely needed shredding. The yeast rolls which we already had made for great sliders!)

Chicken with dumplings (It was very good but very heavy. I think we will save this one for the fall/winter months. I put frozen carrots in mine and they were very good.)

Right now I have the Honey Chicken from the other thread in the crockpot. I plan on making eggplant parmesean in there tomorrow!

For those of you who don't have AC, have you noticed your crockpot is cooking a lot faster since it's warm out? Or maybe mine is just ready to die and that's why it is cooking faster?

I tried the chicken with bbq and pineapple...so/so. I served it over rice, probably won't make it again. My family doesn't like fruit and meat dishes.

We found the pulled pork cooked in root beer too sweet even w/ the Sweet Baby Ray's sauce.

I don't use root beer, simply a Boston butt and a small bottle of Kraft spicy honey. I cook on Low for around 6-7 hours, remove all meat from the crock, pull apart with two forks. I'll mix some good BBQ sauce like Willamson Bros. ( local Atlanta chain) or Rendezvous or Sweet Baby Rays or Sticky Fingers with some of the meat juice/Kraft mixture. Moisten the meat sufficiently, place in warming drawer until ready to serve with or without buns.

I don't like fruit and meat dishes either..for some reason they just don't work with my taste buds!

I did make a buffalo chicken pasta which was a HUGE hit with my boys! I put in chicken breasts & thighs (I find all breasts come out too dry) I big bottle of Frank's hot sauce with 4tbs melted butter, I can cream of chicken soup and 1 pkg dried ranch dressing mix. After about 4 hours I shredded the chicken, added salt, Pepper and little chicken broth and continued cooking another 4 hours. In the final hour of cooking I took a can of chicken broth and a box of pasta (I like Farfalle or penne rigate) mixed and cooked an additional 30 mins. May have to adjust the liquids to cook the pasta, but this was super yummy! My boys actually put a little ranch dressing on the side and LOVED dipping it in the ranch. I liked it too..but most probably wouldn't.

We don't like Blue Cheese, but I bet blue cheese crumbles on top would be good for those who do like it.

ilovepete,

We are at Disney right now. Today we tried your chicken with stuffng recipie in the crock pot. It was so delicious!! I think it has been our most favorite, and wll now be one that I'll make for our Sunday Church meals! It was very easy, and the chicken was so tender!!!! Thanks for sharing.

In the summer I hate to heat up my kitchen with the crock pot so I cook outside with it on the back screen porch!

I like to make soups and stews in bulk and freeze them. I will thaw the container a little and pop them into the crock pot set on warm for the day and it is the perfect temperature by dinner time.

1 lb boneless skinless chicken breast, frozen
11 3/4 ounces fat-free cream of mushroom soup
16 ounces fat free sour cream
1 (1 1/4 ounce) envelope dry onion soup mix
Directions:
1Put frozen chicken in bottom of crock pot.
2Mix soup, sour cream, onion soup mix, and pour over chicken.
3Cook on low for 7-8 hours.

My favorite Crockpot meal. It is an old Weight Watcher recipe. Works fine with full fat soup and sour cream also. Serve over noodles.

Pot roast. Yum!

I agreed. I Pot Roast cooked in a Crock Pot is really good. I also add a few cans of greens beans and a few cans of potatoes when we aren't home. (I cook enough for a few days bc in my opinion it's better the second day.)

Pot roast. Yum!

Corned beef also comes out great in the crock pot because it's constant heat without boiling. (Boiling makes it tough.) I cook the cabbage separately, but you could mix it in if your family doesn't mind.

I started the root beer bbq pork in the crockpot yesterday since I found one lone can of root beer left in stock. I'll shred it and add the BBQ sauce for dinner tonight. So far, no one liked the smell and no one snitched any. Not usually a good sign in my house. Ah well, have to try new things - I can always go back to my usual recipe.

Great idea! I never thought to put frozen soup in the Crock. That will be perfect because I always freeze half of my veggie and taco soup!
I tried the pork bbq and didn't like it, I think I may have cooked it too long but it was dark and unappetizing looking. I used Sweet Baby Ray sauce. I find frozen meat works better in my new crock, it seems to get a lot hotter than my old one did.

Hi all,
so with Football season underway, I've kinda not been cooking at all..but I'm back on the bandwagon! I made the crowd pleasing favorite of White Chicken Chili and it's still a favorite!

I'm doing a mock chicken a'la king tonight and will let you know how it comes out tomorrow!

I do my corned beef in the crock pot every time. I add the potatoes about 3 hours before it finishes and add the cabbage about 2 hours before. Cooks up perfectly every time, we devour this. Add some Irish Soda Bread and rainbow cupcakes and it is the perfect meal. :)

Rainbow cupcakes - how cute! For St. Patrick's Day, one of the bakeries in Brooklyn used to make "Frog Cakes." My MIL bought them every year for us. They were oversized Petite Fours with green fondant over a scoop of pink frosting. They decorated them to look like frogs with their mouth open, showing the pink. Hopefully, when Leske's reopens, they'll make them again for the holiday.

Frog cakes!!! How adorable!! I may have to share this idea with my friend who makes cupcakes. :)
We love making the rainbow cupcakes and they are very easy to do. I'm sure if you do a search you'll find a recipe online, basically I just use a white cake mix, add food coloring and layer them in the cupcake liner, when they bake and rise they go into the rainbow shape. I put plain white on the bottom of the liner, add the colors and then add a little plain white on top, then frost them however I want. I'm on the search for gold dust to put on the top of them for next year. :)
