Critique my Dining Itinerary Please

I'll be taking my 73 y/o mom for her first ever trip to WDW Dec 9th-18th. We will be doing a split stay at POFQ and CSR. She is not in good health and this will truly be a once in a lifetime trip for her. She mainly wants to explore the resorts, look at the Christmas stuff, and enjoy the dining. She is pretty much a meat and potatoes kind of girl, but has said she wants to try different things for this trip. She is also a VERY brittle diabetic who must eat well and at certain times, so almost all of our meals will be TS. I have the DDE card. I will need to make ADRs Sept 10th, so need to finalize our plans. Tell me what you think:

This would give her seven character meals and put us in eight of the resorts. Besides the value resorts (which we would probably skip) the only other resorts we would have to go explore the Christmas decorations would be the Epcot area ones (BC/YC, BW, Swan, Dolphin). It would give her 25 TS and only 3 CS to have to deal with. I've looked at the menus, figured what we would probably order and figure I should save about $150.00 for the two of us using my DDE and AP discounts. What do you think? Anything I should add or delete? By the way she eats very little if any beef, which is why I left Le Cellier out and she wouldn't like any place really fancy.
 
I think you should have more meals. Other than that, it looks good.

Hey with her diabetes we don't have a choice. She eats breakfast around 7:00am, a snack about 9:30am, lunch between 11:30 and 12:00, a snack about 2:30pm, dinner between 5pm and 6pm, and then a snack just before bed. She doesn't necessarily eat much, but must eat frequently. If she doesn't, she will pass out on me. She takes insulin four times a day and MUST eat. I'm hoping most of the breakfast places will have a fruit bowl or smoothie for me, as I don't usually eat breakfast and don't even like eggs.

There's also the fact that I'm a commando type tourer and have a tendency to forget to eat. This trip is about her and having scheduled meals will MAKE me slow down to her speed.
 
I'm just teasing...I like the list, a little of everything.

I was just wondering if you had any schedualed breaks in there for swimming , napping , etc. I see Sat all your meals are in Epcot are you planning on staying all day? My one suggestion would just be to make sure and stop and smell the roses and to not over do it.
Also the DDE card is great and will save you lots of money.
Also just in case you didnt know I believe the CP packages are already on sale and you dont have to wait until the 90 day mark.They go fast so if you haven't called I'd call right away.
