I'm making mushroom blintzes as part of our Christmas Eve dinner. Can i make the crepes ahead of time and refrigerate them or would they get stale and hard?
I think it would depend on how long you were going to keep them I have made them and warmed them up the next day and they were fine but I don't know that i would keep them andy longer that.
Stack between layers of wax paper. You can freeze them this way, but will keep well if it's just a few hours. To rewarm, you can place in a pan with a little butter or (since you'll just fill them anyway) toss them in the microwave
