I am going to a cookie swap on Dec 23rd and have to bring 5 dozen cookies. Last year I made molasses spice cookies and they weren't all that special so this year I want to make something fantastic. The kicker is that I don't have time to spend all day in the kitchen so I need something quick but wonderful. Does anyone have any great recipes kicking around? Maybe there is a thread on this already someone could direct me to. I would like to do a practice run this weekend so any suggestions would be much appreciated.

Whipped Shortbread ( These melt in your mouth and are So good!)


1 C Butter ( no substitutions)
1 1/2 C Flour
1/2 C Icing sugar ( powdered sugar)

combine all ingredients and beat for TEN MINUTES ( thats the key)
drop from teaspoon onto cookie sheet decorate with Marachino cherries if desired, bake at 350 for about 17 minutes until bottoms are lightly browned. Makes about 3 dozen small cookies. ( never makes 3 dozen but thats what the recipe says lol)



Also for a big bang with little fuss you can try Russian Tea cakes or snowballs or Mexican Wedding cake ( all the same cookie basically)


Russian Tea Cakes or Snowballs

1 cup butter softened
1 cup powdered sugar (plus more for topping)
1-1/2 tsp. vanilla
2-1/4 cups all-purpose flour
1 cup finely chopped almonds
3/4 tsp. salt

Heat oven to 350 . Mix butter, 1 cup powdered sugar and the vanilla. Stir in flour, nuts and salt. Shape into 1-inch balls. Place about 1 inch apart on ungreased cookie sheets. Bake for 17 to 20 minutes or until set but not brown. Roll in powdered sugar while warm. Cool. Roll in powdered sugar again.



hint grind the Almonds in the food processor this is really quick and makes them almost powdered which is what you want for this recipe. If you do this, the recipe takes almost no time at all! :)

It is a VERY easy recipe and every time I bake these people beg me for the recipe. they are delicious.
You use cake mix. You add an egg and some water but I don't remember how much. I scoop the cookie dough out using a melon baller, then roll it in a ball and press it with a glass. Each cookie comes out the same size as the next. You can add sprinkles or frosting if you want to decorate them. I used the canned frosting just as the cookie started to cool and spread it out. then I put on some Christmas sprinkles. Each box makes about 4 dozen.
I made spice, chocolate, lemon and vanilla (white cake mix) in addition to the pies etc for last Christmas dinner and and they were all gone that night. My adult relatives ate the cookies before the apple and pumpkin pie. Peggie

Nancy's Chocolate Whoppers

6 ounces semisweet chocolate
2 ounces unsweetened chocolate
6 tablespoons unsalted butter
2 large eggs
3/4 cup sugar
2 teaspoons vanilla
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 cup flour
6 ounces semisweet chocolate chips
4 ounces walnuts -- chopped
4 ounces pecans -- coarsely chopped

Oven rack in middle of oven. Preheat oven to 350 degrees. Line cookie sheet with foil.
Microwave both chocolates and butter in a medium bowl on high for 1 minute, then stir. Repeat at 30 seconds intervals until chocolate and butter have melted and mixture is smooth. (Or melt chocolate and butter in a saucepan over low heat, stirring until smooth). Let cool slightly.
In another bowl, with mixer on high speed, beat eggs, sugar, vanilla, salt and baking powder until lighter in color and bubbly, about 2 minutes. Reduce speed to low and beat in chocolate mixture (which may still be quite warm). Add flour and beat just until blended. Stir in remaining ingredients.
Drop about 2 tablespoonfuls batter per cookie, spacing about 2" apart (dough is gooey).
Don't flatten tops.
Bake 9-11 minutes, no longer. Surface will be dry, shiny and cracked, but inside will be soft.
Slide foil off cookie sheet onto countertop. Cool cookies on foil, or remove to a wire rack to cool.

Damsel's Famous Gingersnaps

Amount Measure Ingredient -- Preparation Method

3/4 cup shortening -- or lard
1 cup sugar
1/4 cup molasses
1 large egg
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
2 cups flour

Combine ingredients in order given. * Do not use butter or margarine!
Roll dough into balls the size of a walnut. Dip one side in sugar.
Place dough balls, sugar side up, on ungreased cookie sheet.
Bake 10-12 minutes at 375F.

NOTES : Try omitting the salt next time.

all for sharing your recipes. I will try some out this weekend and let you know how they turned out. It is neat to see how many different cookies people bake for the holidays. Aren't traditions wonderful? And special to share, too.

So glad I found this thread. I am going to a cookie swap on the 14th. Went for the first time last year. It was the best time. The one I attended was held at a distant relatives home. I lost count of how many people showed up with dozens of cookies. All the cookie were places on two very big tables. The hostess had snacks and soup for all the guests to enjoy. We then all got in line and took turns picking cookies from all the different platters. WOW we ended up with so many different kinds of cookies. It only took a short time to make the cookies we took but when we came home we had enough cookies to last for a week. It would have taken a very long time to make all the different kinds of cookies we ended up getting at the swap. What a great way to sample wonderful cookies. This year I am printing out little recipe cards to place near my cookie plates for anyone who would like the recipe.:D
 
Sorry for the delay. I couldn't remember which board this was posted on. I searched all the boards and couldn't find this post. I finally did a search on me and came up with all the posts I contributed to.
I baked 3 "boxes" of cookies last night when I came home from work at midnight and was in bed by 2. I made a little over 12 dozen cookies in less than 2 hours.
I made vanilla (make sure to put sprinkles or frosting on thses, the flavor is bland without it), Chocolate and Cherry Chip.

Cookies from Cake Mix
1 box cake mix (I like the pudding in the mix but it works good with cheap store brand too)
2 eggs
1/2 cup oil
Mix all ingredients, drop by tablespoonfuls onto cookie sheet. Press flat with finger or glass.
Bake in 350degree oven for 10 minutes.
Makes approx 50 (if using 1/2 tablespoon size cookies)

I thought the tablespoon was too large a cookie. I use a melonballer but couldn't find it this time so I used 1/2 tablespoon. The cookies come out 2 bite size, just enough for me to have one and be happy. (About the size of an oreo)
 
My mom's Christmas Butter Cookies recipe. You need to have a cookie press for these. You can usually find them pretty cheap, around $10.00 at most stores. Our local grocery store even carries them.


3 1/2 cups flour - sifted (makes a huge difference)
1 1/2 cup sugar
2 tsp. vanilla extract
1/2 tsp. salt
2 eggs
1 tbsp. baking powder
1 lb. butter - softened


In a large bowl combine softened butter, sugar, vanilla extract, salt, eggs and baking powder. Start to mix until ingred. are pretty well combined. Slowly add the flour a little at a time until all the ingredients are mixed. It will be pretty thick. Mix well.

Use a spoon to fill cookie press. I usually use the holiday designs, xmas trees, wreaths etc. The smaller the amount per cookie the better, they look nicer and you get more out of the batch. Decorate with sprinkles or red and green sugar crystals.

Bake cookies in a 350 degree oven for about 7-10 minutes or until slightly golden.

Enjoy, they are my favorite!!
Usually makes 16 doz cookies.
