Coca-Cola Chocolate Cake
4 cups flour
6 tablespoons cocoa
3 teaspoons cinnamon
1 teaspoon salt
2 teaspoons baking soda
4 cups sugar
1 pound butter
4 eggs
1 cup buttermilk
4 teaspoons vanilla
2 cups Coca-Cola
Icing
1/2 cup butter
1/2 cup Coca-Cola
6 tablespoons cocoa
1 cup chopped pecans
2 teaspoons vanilla
2 boces powdered sugar
Grease and flour an 11x17 inch pan. Sift together the dry ingredients and set aside. In a saucepan, heat the butter and Coca-Cola until the butter melts. Add the eggs, banilla, and buttermilk and mix well. Add the liquid to the dry ingredients and beat until smooth. the batter will be very thin. Pour into the perpared pan and bake at 350 degrees for 30 minutes. (Will fill 2 tube pans or 2 paper-lined cupcake tins. Bake tube cakes for 60 minutes; cupcakes for 15 minutes.) This cake must be iced while warm.
Icing: In a saucepan, heat the butter and Coca-Cola. Do not boil. Add all of the remaining ingredients and mix well. Pour over cake.
If anyone is interested in making it!
I think it had a pretty strong cinnamon taste, but everyone else seemed to really like it. Also the batter wasn't really thin, it was about normal (like a boxed cake mix)... and the frosting, I used a 2 pound bag since at the store the boxes were 1 pound... the frosting was a bit thick, it couldn't have just been poured over the cake, I put blobs of it on and it melted some and then I spread it around.
I thought about sprinkling powdered sugar over the top to give it the "coke" effect........ but decided not to
