I've made cloud bread. It's actually really good and I hate cottage cheese. It's fluffy but works well for a sandwich.
The recipe I use calls for cottage cheese rather than cream cheese. I hate cheese in general.
It doesn't taste like cream cheese. I make it with cream cheese. I also leave out the sweetener but add spices, I like it more savory.
If you aren't a fan of artificial sweeteners you can use honey.
The most important thing is to let it sit, sealed in an air tight container over night so it takes on a more bread like consistency.
I use the 1/3 less fat cream cheese and I have used the flavored ones.
I just watched a video on making cloud bread - had never heard of it, but I intend to try it - will also take the tip to let it refrigerate all night for better texture.

Not refrigerate, just sealed in an air tight container like Tupperware.. If you don't do that it has more of a meringue consistency.
I can't open your recipe but for each ounce of cream cheese it calls for substitute a tablespoon of cottage cheese.
I haven't tried this yet, but have seen cloud bread recipes floating around on Pinterest for a while. I'm glad to hear some positive reviews - I may try it this weekend! We make a low carb pizza crust out of eggs, cream cheese, and mozzarella cheese plus spices, and it's amazing, so I think I'll like this!
PS for any of you that want to use sweetener for baking (or just every day use) but don't like stevia, PLEASE check out Swerve. The only place I can find it in town is Whole Foods, but it's amazing. They even make a confectioner's Swerve (for icings!) - not grainy or chemical tasting at all. It's delicious!!!!

She did a test of all the "low carb" pizza crust recipes to find which one she thought was the bestwe also tried the almond meal one and the cauliflower one, but the cream cheese crust was our favorite. My husband is a New Yorker and he was very scared of crust made from anything but bread - but he loves the cream cheese one. We aren't fans of cauliflower (it just didn't TASTE right), and the almond meal crust was more like a cracker.
