Definetly want to at 180 days out. The phone lines open at 7:00 EST so make sure to start calling the number about 5-10 mintues before and just keep redialing until you get through. When you get through immediately tell them the what you want, date, and time, don't worry about small talk. Also, this tip may be helpful. Let's say you are wanting to do the castle breakfast the 3rd day of your DW vacation, call 180 days before your first day of your vacation and book a dining reservation that day and then you can book all of your reservations for the rest of your visit at that time as well even if they are over the 180 days. I hope that makes sense. My travel agent said I was the only one she every has known to actually get into the breakfast at the castle. I try very hard to get what I want, I was also lucky enough to get the Illuminations cruise on the "Breathless" on Thanksgiving night.
I'm not sure about that, we are staying at the Poly and I tried calling before the 180 days and they would not let me book anything until then. It doesn't hurt to try thought, you never know.

I also did this for our 2007 vacation and was able to get a breakfast reservation for CRT. One thing I ran into...I wanted to book CRT for the 2nd day our trip but found the entire day booked already when I called. This happened because people who were arriving at Disney 1-10 days prior to us were able to make their reservations before me. In order to secure a reservation it might be wise to plan to go to CRT towards the middle or end of your trip...you'll probably have better success!
Disney switched to the 90 day mark while they updated or redid their system. It is switching back to 180, but I am not sure when that happens. If I were you, I would call at 180 to be on the safe side.
The 180 + 10 doesn't always work for Cinderella's Royal Table. They don't release all their tables so if you don't get it at +10 keep calling back. I have heard of a lot of people getting it on the exact 180 day whereas as they hadn't gotten it earlier.

I am editing to add that I just checked on CRT. It and Chef Mickey never went to the 90 day mark. It is still 180 so that is when you should call.
Thanks for all your input! I called today and got a reservation!! We actually had quite a few choices but I think that's because we're going in February. I think I'm more excited than our 3 yr old!
