Christmas menus?

My family, who swear that they don't like roast turkey dinner, has asked for "Leftover Thanksgiving Dinner Sandwiches" for dinner... on Christmas Eve. I am NOT doing a whole turkey dinner just for sandwiches! However, I found Butterball turkey breast (frozen) on sale for 99cents a pound, so I bought one. Christmas dinner will be braised short ribs with roasted carrots and mashed potatoes, lemon meringue cheesecake, and I'm not sure about the 2nd dessert, maybe just chocolate cake. We have an awesome family recipe that DD makes for every work event/birthday. It's our turn! Breakfast that morning will be blueberry/cherry cobbler. I know, sounds like it should be dessert but it's not very sweet... and it IS Christmas, after all!
 
Plans have changed since I posted in October. We are having 10 people total for Christmas Eve dinner. Now the menu is:

Charcuterie
Spinach artichoke dip
A really pretty Christmas salad/ saw recipe online
Prime rib
Mashed potato bar
Burgundy mushrooms
Rosemary rolls
Peppermint pie
Hot chocolate bar

Dh is going to be making smoked old fashioned, I’m going to make homemade eggnog. Wine with dinner.
 
We do a hashbrown/egg casserole Christmas morning.
Then I make a Beef Wellington, twice baked potatoes, a special salad, spinach artichoke casserole, and rolls for Christmas dinner. <3
 
We’re going with lasagna on Christmas Eve. Something quick and easy to prepare with all the other things going on…Mass, last minute wrapping, etc.
Christmas morning we always have cinnamon rolls, a sausage/potato casserole, pancakes and bacon.
Dinner will be french onion soup, NY strip steaks (didn’t get beef tenderloin on sale this year so we’re going with the strip steaks I already had,) twice baked potatoes, roasted Brussels sprouts, roasted broccoli and corn (for dd who doesn’t want any of the green veggies😂.)
 

We're ending up with Asian for dinner.
Prepackaged
Orange Chicken, Korean Chicken, General Tso's chicken, plain rice noodles, Yakisoba, Chicken egg rolls, vegetable egg rolls, 2 kinds of of dumplings.
Now to manage getting it all cooked....takes oven, microwave and stove top.

Dessert is cookies.....all made by me plus macarons
breakfast will be Gluten free cinnamon rolls, chocolate chip muffins, blueberries muffins, Southwest omelet in the oven and scrambled eggs in the oven.

During the day will be meats, cheeses and crackers

Can I come to your house? I think your menu is divine, right down to the peppermint pie and smoked old fashioned! Nobody here will eat prime rib, SIL is ooogy about homemade eggnog, I'm the only one who likes peppermint. ENJOY, celebrate, and have a wonderful Christmas Eve!
 
Hosting my brother for lunch tomorrow. Making the meal his autistic kid wants for lunch. I'm known for lunch being lunch trays, so we're doing a plate of sliced steak, a homemade cheese and cracker tray, and a fruit and veg tray with carrots, celery, apples, pineapple, and blueberries (his sis and his favorites) with an vanilla gingerbread dip (gonna use cocowhip, vanilla pudding, coconut milk, and the gingerbread spices/flavorings) and hummus (he won't touch) and chocolate chip and hot cocoa cookies for dessert. I'm saving half the steak to make for my kids later for dinner, where we'll have the same other foods for dinner (so I can enjoy my brother's family's visit).

Originally brother suggested pasta (b/c of my wallet, I think), but I found a good deal on steak, and it's Christmas and easy...

Do you make the peppermint pie or buy? I am looking for a good recipe since the bakery that sells them here is...ridiculous in price.

Our menu went Italian this year. A few lasagnas - regular, keto, veggie. Pasta ala Vodka, salad, garlic bread, apps, dessert.

I am only responsible for an app and a dessert. Making a no-bake eggnog pie (oven is broken) and a layered pesto dip.
 
Last year’s menu was a hit so we’re doing it again. We put out individual crusts, sauce, cheese and toppings and everyone makes their own pizzas. We add a little salad bar and some easy (premade) desserts. I used to cook big Christmas dinners but then I wouldn’t enjoy my Christmas Day as much. I’d rather hang out and chill with everyone else and make an easy dinner. One year we did a burrito bar which was also a big hit.
