Christmas menus?

I do a hot/cold buffet and people come in and out as they please. All of our children are adults and sometimes need to go to multiple places. Some of their friends also come with them. This year's menu:

Cheese/crackers
Shrimp cocktail
Scallops wrapped in bacon
Buffalo Chicken dip
Bean dip
Corn & Tomato Chowder with shrimp & bacon
Meatballs
Sweet/sour kielbasa
Ham
Baked beans
Broccoli salad
Tossed salad
Rolls/butter
Cookies/Bars
 
Christmas Eve: Always Italian. Lasagna, GF spaghetti squash lasagna, antipastos, bacon & blue cheese stuffed dates, pimento cheese stuffed celery, broccoli, & tiramisu.

Christmas Day: Cinnamon rolls, hashbrown casserole, bacon, sausage, deviled eggs, & fruit. Then leftovers.
 
The following menu was requested by DGD so that’s what we’re having:

Christmas tree shaped veggie appetizer platter

No soup. No soup, sez I?!? No soup, sez she. Well alright but don’t be surprised if the Grinch steals all the presents….

Fried chicken, potato salad, collard greens. My VA Nana would be bemused.

Gingerbread cake topped w/ chocolate ganache and vanilla ice cream
Holiday cookies
 
We had to move our plans around. We have a lot of construction happening so this is the year I’m not decorating or having anyone over 😢 we will be going to my parents instead of hosting. My mom is serving lasagna, salad, and garlic bread. I’ll bring cookies and some other desserts.
 

Christmas Eve:
Tamales
Carne Guisada
Enchiladas Verdes
Rice and beans
Queso and Guacamole
Veggie Tray
Assorted Christmas Cookies for dessert

Christmas Day:
In the morning before we open presents I’ll wake up early to make monkey bread and a fruit salad. We can have that to munch on before presents with our coffee and wassail.

Brunch after presents:
Belgian waffles
Blueberry syrup
Scrambled eggs
Hashbrowns
Pigs in a blanket
Bacon
Fruit

I always try to have a soup on the Christmas menu only so I can use my fancy tureen. No soup this year though for us, either.

Fried chicken and potato salad was always my meal of choice growing up for any celebratory gathering. My mom was the fried chicken boss. I wish I was having that this Christmas!

My ganache never turns out right. Any tips?
 
It's looking like we're now doing a trio, with things prepared on different days...

Traditional Roasted Turkey - Ham - Brisket (as in get out the smoker TX BBQ style brisket)

I also saw a recipe for a dip that will be either a Christmas Eve or New Year's Eve snack. Crab rangoon dip!
 
We've finalized our menus, with a few changes.

Christmas Eve evening:
fondue (just cheese this time)
steamed shrimp, crab cakes
odds & ends of the finger food variety that have yet to be decided upon
cookies and ???

Christmas morning:
bagels w/ salmon with accompaniments
quiche loraine
cinnamon rolls

Christmas Dinner:
chicken parm
choc cake & cheese cake
 
I'm making short ribs w/ mashed potato.

I make roasted asparagus or roasted brussels sprouts all the time.

Who has a good idea for a vegetable?
 
Simple roast turkey - the bird, gravy, roast potatoes, stuffing, peas, carrots, bead sauce, cranberry and more. The dogs get a (mini) roast dinner too ;)

Who has a good idea for a vegetable?
We love roasted red onions. Can make a day ahead too. Slice onions in half. On baking sheet melt a couple tbsps of butter. Season onions with salt, pepper and drive thyme (or fresh). Place face down in sheet and roast in 400 degree oven for about 30-45 min. Flip them halfway. Can then just cool them on pan and refrigerate. Next day you just plop in 350 oven until they are warmed through.

PS. I have also drizzled them with balsamic glaze before too.
 
All 3 adult kids will be home for a few days with significant others. Very excited so I am making a mountain of food so they can all take leftovers.

Christmas Eve will be a NY Strip Roast, Mashed Potatoes, Garlic Green Beans, roasted onions and rolls.
Christmas Day is Spiral Ham, Hash Brown Casserole, Mac and Cheese, Baked Ziti, Corn, Asparagus and Rolls.

Apps for both days will include Queso, Buffalo chicken dip, shrimp cocktail, sweet and sour meatballs, pigs in a blanket, cheese and crackers, Boursin Dip.

Desserts are Chocolate Cake, Apple Cake, Cheesecake, French Silk pie and cookies.

I probably spent more on food than gifts.😀. And that doesn’t include the bar bill.😉
 
Christmas Eve is out to Benihana with a friend and a couple of his friends.

Christmas Day I am making my grandmother's lasagna, "Olive Garden" salad, and bread sticks. Not sure about desserts.
 
I cook the same menu every Christmas Eve for about 6-8 peoples. It's been about 10 years but everybody still want the same menu..lol

Brown sugar bacon wrapped scallops
Crabmeat stuffed phyllo cups
Beef tenderloin
Mashed potatoes
Corn pudding
Garlic green beans

Guestusually bring desserts

Christmas Day Morning:
Breakfast casserole
Cinnamon rolls

Kids (adults) take their dad out for xmas day dinner
 
We are doing brunch instead of dinner this year. I plan to make a hashbrown casserole and a sourdough cranberry-orange star bread. Never made either so wish me luck. Any helpful tips also welcome.
