What is an easy Christmas meat to buy and cook - cost doesn’t really matter.
My husband and I are vegetarians, but I have guests coming for Christmas dinner. Probably 4 people would eat meat.
My menu:
Appetizers- pinwheels, little smokies, crusted Parmesan potato bites, veggies/fruit tray
Dinner - Stuffed shells, mashed potatoes and gravy, homemade mac and cheese, corn casserole, glazed carrots
Dessert - various cookies, ice cream cake, pies
 
Personally I love your menu and don’t feel you need to add any kind of meat🙂

But if you must, if it were me I would go to the deli and get a few half inch slices of good quality ham. They can be halved, or even quartered and just warmed in the oven. I would add some fresh pineapple chunks and juice to the dish before warming.
 
Ham would be the easiest thing.

My family's preference for Christmas is standing rib roast, but that might be more work (and $$) than you would want for only a few people.
 
Your menu looks very good.
I would add some roast beef that people could either put on a roll or eat by itself. You could put it in a crock pot for people to take what they’d like.

With that menu, stay Italian and just do meatballs...as a kid, my mom did meatballs with stuffed shells for Christmas a ton...and meatballs will also go with the mac and cheese...it's cheap, easy (since you can buy premade and drop in a crock), popular, and it "fits" with your menu...

I have a friend who does stuffed shells for Christmas Eve. She makes one pan with a spinach & ricotta filling and another pan with a meat filling (like a bolognese, I think).
 
I would leave it as is but I like the idea of adding meatballs like someone else suggested!

Yeah, meatballs or sausage are super easy and go with what you have.
 
Well, stuffed shells require a mix of ground beef and sausage to stuff them with for this meat eater so I would just make some stuffed shells with ground beef and sausage mix. Then there's no special food for anyone, everyone is eating the same thing.
 
I got a small boneless spiral ham.
I'll throw that on low in the crockpot with a can of crushed pineapple.
Always comes out perfect and ready to serve and leaves the oven free for the sides.
