Choices - 2 adults dining - what do you think?

Would we prefer the LTT for lunch on a MK day vs The Plaza or should we do what we did last time at WDW & go out of the park for a break from the heat/crowds & dine at someplace like Kona Cafe, GF Cafe, or WCC or even an afternoon tea at the GF?

Next, we've had lunch at Brown Derby & loved it. Now for a Fantasmic evening at a busy time of year for 2 adults (DH decent appetite, Me - small appetite - often can share with DH & feel satisfied), should we try the 50's Prime Time Cafe? The menu isn't all that appealing to me, but the atmosphere sounds really fun (same with WCC which we've never tried but looks like we'd enjoy it). Now the positive with this is that we could just share a sandwich or I could eat a salad; the menu at Brown Derby is fantastic & I thought about doing the Fantasmic dinner pkg there (don't like buffets so HV does not appeal & Mama Melrose's might be ok, but we are planning Mama Della's at UO later in the week when we stay at the PB), but it would be A LOT of food; a kind of like the lunch idea at Brown Derby or a dinner, but where we could share (it would be cheaper too! :) )

What do you experts think?
 
LTT is a wonderful lunch. We went there on our last trip the food was good and pretty reasonable. It was nice to sit down in the AC and have the Tri Corner sandwich. We also have come out of the park and done lunch at Konas, Concourse & WC. All were great and tend to be a little more quiet.

As for dinner at MGM, I would definitely recommend Brown Derby perhaps you could get an appetizer and split the Cobb Salad. The food at BD is more gourmet so not huge servings. It sounds like you werent impressed with the menu at 50s PT so maybe think about that as a lunch.
Mama Melroses is one of our favorites but since you are doing italian later in the week I probably wouldnt do it.
I definitely would do ADRs today! We are going this weekend too and had a hard time getting into some of the restaurants.

Thank you for your suggestions, Grumpy92! Would you do the Fantasmic dinner package & get great seats without waiting in lines for the performance? It just seems like a lot of food!
