I've neber seen this on the menu at Chef Mickey's....however, I have the version they serve over at Boma.
CHICKEN CORN CHOWDER
from Boma, Animal Kingdom Lodge
2 Chicken Breast
1 lb Russet Potatoes
2 c Corn Kernels
1/8 c Onion
1/8 c Red Bell Peppers
1 c Chicken Stock
1 c Heavy Cream
1 c Milk
2 tsp Sugar
2 tsp Hot Sauce
1/8 c Fresh Parsley
1 cube Chicken Bouillon
Recipe uses cooked chicken & potatoes. Dice potatoes, onion & pepper; chop parsley. Bring chicken stock to a boil. Add milk, cream, chicken, potatoes, pepper, onions, corn & sugar, then simmer 40 min. Add parsley & hot sauce, then simmer five min. Serve hot.
Yield: 8 servings
