This is Olive Garden's sausage and potato soup. You could double or triple the recipe. We make it every Thanksgiving and in fact it's for dinner tonight. To make it cheaper, you could use regular milk or skim instead of heavy cream and mash a few of the potatoes to make it thicker. The recipe calls for 2 potatoes but I always use 4.
I have been using the packets of instant mashed potatoes (where you add boiling water) as a base for soups, adding chicken broth till you obtain the desired consistency. You can add anything (I usually add canned potatoes as they are soft and ready to go, corn, and chicken chunks), similar to above poster's idea.
Honestly, I use the Bear Creek soup mixes. They are super tasty, quick and easy and make 8+ cups of soup for $4.50. We love their chilli, potato, cheddar potato, and wild rice. We do add meat and salsa to the chilli and serve with cheese and sour cream. We also garnish the potato soups the cheese and sour cream.
I used to make from scratch but can't beat the price for the mixes.
Black bean soup. I start mine with canned black beans ( 89 cents a can) but I suppose you make the recipe even cheaper by using dried beans.
I've been using David Liberman's Black Bean Soup recipe for years. My only adjustment is to add a can of refried beans to the soup to thicken things up. I also will had some chopped up pickled jalenpenos for a bit of spice.
We don't really use recipes in my house, especially for soup. Soup can be anything you want. You just need some sort of liquid base and your options are endless. You can used canned products or fresh it really doesn't matter. Left overs are great for making soup.
I like to make baked potato soup. I cook/crumble a lb of bacon with an onion then add chicken broth and peeled and rough chopped potatoes cook until soup is the consistency you want, and serve with cheddar cheese on top. Add salt and pepper to taste.
Another is green pepper soup. I don't use a recipe, I just throw things in the pot. I brown ground beef, chop green peppers and onions add to chicken broth and add rice and a some diced tomatoes and a can of tomato sauce. Again salt and pepper to taste.
I got this recipe from a friend of mine. It makes LOTS. There really are no measurements. It's really really yummy (and rich).
Creamy Tomato Soup with Sausage and Cheddar
Boil water in a big pan. Add a pound of elbow macaroni and some of minced garlic and cook until most of the water is absorbed by the macaroni. (Do NOT drain). Meanwhile, cook hot italian sausage links, and slice them into bite size pieces. Add the sausage to the macaroni, also add a can of evaporated milk. Shred some cheddar cheese (I used almost 3 cups, I think), mix until the cheese melts. Add Tomato Juice until the soup is liquidy enough for you (keep in mind that the macaroni will absorb more than you think). Add black pepper to taste.
1 large can (or Bottle) of V8 juice dilluted with one can (bottle) of water. Chopped onion, carrots, celery, a little orzo or other small pasta (about 1/2 cup) and seasoned ground beef meatballs. Put it all together and simmer for a while. I also add a little garlic powder, salt, pepper and cumin for seasoning. Serve with warm flour tortillias and butter
