Cheap, easy Crock Pot ideas.

After a holiday my Mom used to make soup from the ham bone. I tried this recipe yesterday and it came out great:

CROCK-POT BEAN SOUP

1 lb. white beans (Great Northern)
1 smoked ham hock or 1 lb. smoked ham, diced
1 c. celery, sliced
1 c. onion, chopped
1 c. carrots, chopped
2 bay leaves
1 (16oz) can stewed tomatoes
1 (10 2/3 oz.) can condensed tomato soup
Salt and pepper to taste

Soak beans overnight in 4 cups water. Compine all ingredients in corck pot.
Add water to cover and mix well. Cover and cook on high setting 3 hours,
turn to low setting and cook for 8 to 14 hours. Can be cooked entire time
on high setting for 4 to 6 hours. Remove bay leaves when done.

We are a small family so I only added 3/4 of the beans....
and I cooked it on high setting for 4 1/2 hours.
 
yesterday I took boneless ribs and added a bottle of bbq sauce.

Today was a pot roast with 2 cans cream of mushroom soup, 1 package onion soup mix, 1 cup beef broth. At the end I threw in 2 cans of mushroom. I made a pot of white rice to go with it.
 
I love this one. I put the potato soup in the blend to smooth it as I don't like the chunks:

Wild Rice Cheese Soup

½ cup wild rice
1½ cups water
9 slices bacon, chopped
1 small onion, chopped
2 cans Cream of Potato Soup
2 cups milk
8 ounces Velveeta cheese
1 pint half & half

Cover and cook the wild rice in the water for 30 minutes; drain. Fry the bacon, remove bacon and reserve the grease in the pan. Saute the chopped onion in the reserved bacon grease; drain. Add the remaining ingredients and cook on low heat for several hours. (Can use a crockpot)

**You can also combine all the ingredients and freeze before cooking on low for several hours. Just place the combined ingredients in a large ziplock back and freeze. Thaw and then heat on low for several hours.
 
Found some more I had saved:

Garlic Chicken

1-1½ pounds chicken pieces
1 cup brown sugar
2/3 cup vinegar
¼ cup lemon-lime soda (7UP, Sprite or Ginger Ale)
2-3 Tablespoons minced garlic
2 Tablespoons soy sauce

Place chicken in crockpot. Combine other ingredients and pour over chicken. Cook on low for 6-8 hours. Serve with rice.

Beef Tips

1 pound beef tips
1 can Cream of Mushroom soup, undiluted
1 can beef consommé
1 packet French onion soup mix
1 cup red wine
salt to taste

Combine all ingredients and slow cook all day. Serve over egg noodles.

Crockpot Chicken Tacos

4 frozen boneless chicken breasts
1 can chicken broth
1 envelope taco seasoning

Spray crockpot with nonstick spray. Put frozen chicken breasts in bottom of crockpot. Pour broth over chicken. Sprinkle taco seasoning over top. Cook on low for 8 hours. Shred chicken with a fork. Use meat for tacos or quesadillas.

Italian Crock Pot Chicken

4 boneless, skinless chicken breasts, (whole or cut into bite-sized pieces)
1 can Cream of Chicken soup
½ stick butter (no substitutes)
1 envelope dry Italian dressing mix
1 (8oz) package cream cheese, softened

Melt butter, pour over chicken in crock pot. Sprinkle with dry Italian dressing mix. Cover, and cook for 4 hours. Blend soup and cream cheese, pour over chicken for last 1/2 hour. Serve over angel hair or your choice of pasta.

Hawaiian Chicken

1 pound or more boneless skinless chicken breast tenders
1 cup soy sauce
1 cup teriyaki sauce
1 cup sugar
1 can pineapple chunks

Place all ingredients in crockpot; cook on high 4-5 hours. Great with white rice and steamed veggies!

Taco Soup

Into your crockpot, pour the following ingredients:
2 pounds browned hamburger meat
2 cans ranch-style beans
2 cans whole kernel corn
2 cans diced stewed tomatoes
1 can rotel
1 package Ranch Style Dressing Mix
1 package Taco Seasoning

Cook on low for 2-3 hours Serve with grated cheese on top and tortilla chips.
 

Quick and simple chuck roast

3-4 lbs chuck roast
1 can cream of mushroom soup
1 packet of onion soup mix

Put roast in crock pot, spread cream of mushroom soup over roast, sprinkle onion soup mix on top. Cook 6-8 hours
Do not add water, roast will put out enought liquid for gravy.

Thats it, easy and fast to get ready before work. Come home and dinner is done!! :thumbsup2

Whip up some instant mash potatoes or some instant rice. Dinner is ready!!
 
I did a roast yesterday that was so tender and yummy.

2 jars of heinz beef gravy (I used fat free)
1 cup water
1 beef roast

I cooked that all day and added 3 cans of whole potatoes about and hour before eating. I served Maple glazed carrots with it, but carrots could easily be put in with the roast.

Very easy and fairly inexpensive :thumbsup2 Best of all No Onions :banana:
 
I used mine for Thanksgiving and put a Gwaltney shank potion ham in it with a cup of water and let it cook all day.It ill start falling off of the bone and when it does make sure you go ahead and take all of the bone out,or it starts breaking into small pieces.
But it will end up shredding like BBQ and it is so good.
I had alot of my Turkey left and I made 9 pound ham and it was all eaten.They fell in love with it.

Sigh.... I am highly allergic to onions and almost all of these recipes have some sort of onion product in them. Do you think they would taste good if I left the onions out?

Any great non-onion recipes out there for the Crock Pot? I would love to make a great beef stew but don't know what to use to make the gravy from scratch.

I always leave onions out(because I don't like them) and I haven't ever missed them. I have made ALOT of recipes that originally called for them, and neither me nor my dh has noticed not having them.

Easy Crockpot Recipe:

16 oz. bag of dried pinto beans
2 cups or so of ham(cut into small cubes)(I'll use leftover spiral ham or get a quarter/half ham and use the ham for this and several other recipes all week)
spice to taste using: salt, pepper, cumin, red pepper, chili powder, garlic powder
water(add enough to cover beans and ham plus another 1 to 1 1/2 inch)

Rinse beans; Put all ingredients in crock pot; Heat on high overnight and turn to low.

I usually leave it on all day and have it for lunch and dinner. We like to sprinkle shredded cheese on it(once it is in your bowl) Easy, makes alot, and delicious!!
 
I do Spaghetti Sauce in mine at least ONCE a week! - complete with sausage & Meatballs. Load everything in the AM & cook all day! All you have to do is make the pasta when you get home.
 
Here's another favorite of ours and really easy:

1 beef roast
1 can of coke
1 bottle of heinz chilli sauce
1 packet of onion soup mix

Cook on low for 8 hours.

My dh loves it with a little kick, so I normally substitue the heinz chilli sauce with about 10 oz of ketchup and 2 oz of chilli sauce (the vietnamese kind)
I also don't use the packet of onion soup mix since I want to avoid msg in the mix, so I use a few teaspoon of Mrs. Dash.

This sounds good. I know this may sound silly, but can you use Pepsi? We don't have coke in the house.

Meatloaf recipe:
1.5lb ground beef
¼ cup chopped onions (I chop them small)
1 tsp. salt
¼ tsp. pepper
A little garlic powder
1 ½ -2 cups of Italian seasoned bread crumbs
1 egg
¼ cup of milk

~First, beat the egg and milk together in a bowl. In another bowl put the beef, everything else and dump the egg and milk over it. Mix it together really well and shape into a loaf that is at least an inch smaller than the inside of your crockpot.
~Then I chop up about 6-8 potatoes in cubes, toss them in the bottom of the crockpot, so they are cover the bottom, Toss some chopped onions over it. I usually add a little salt and pepper then. Then I put some baby carrots on top of the potatoes.
~ Put the loaf on top of the potatoes and carrots and then spread some ketchup on top of the meatloaf.
~Cover. Cook on high for 1 hour. Reduce heat to Low and cook 7-8 hours. Don’t lift the lid, just let it cook.

Chicken and Dumplings

I'm glad you liked it. This really tastes like the original deal. I was surprised that it was so good when we first made it.

I've been craving my 95+ grandmother's chicken and dumplings, but don't have access to her recepie (and she made the dumplings by hand). This comes close and is so easy.
 
The meatloaf sounds yummy. Don't the potatoes need liquid? If not, how do you keep them from sticking to the bottom?
