We fly through Charlotte when we go to Disney. We love pizza, so we usually go to California Pizza Kitchen. They also have salads and sandwiches, if I remember correctly. Bojangles advertises themselves as famous for their chicken and biscuits, so it sounds like they feature southern style cooking (have never eaten there).

S'barro usually offers pizza, subs, and other Italian dishes (usually have a couple types of pasta dishes). We like them, but have those at home so we don't usually eat at the one at the airport. There is also a deli that you can get made to order sandwiches (don't recall the name) that we thought had decent food. I see from my map that there is also a Wolfgang Puck Express. We like that down at DTD, but haven't tried the airport location. Might have to put that on our to-do list! I also see a Phillips Famous Seafood. Never eaten there, but it seems to be a popular place.
For dessert, you have Mrs. Fields cookies (our favorite

), a large number of ice cream, frozen yogurt, and gelato places, and Cinnabon. Oh, and Rocky Mountain Chocolate Factory (another favorite). As you can see, our diet goes out the window when we are on vacation! As I tell my DH, I diet the rest of the year so I can have fun when on vacation.

Hope this helps! I can try to answer questions about the fast food places if any of those are unfamiliar to you. There are a lot at the airport. It's not a huge airport, but it's a friendly place. Be sure to check out all the rocking chairs in the atrium! There's often piano music to listen to there, as well.
Oh, and my husband likes the local microbrews at A Taste of Carolina, if anyone in the family is into trying new beers! There's one right next to California Pizza Kitchen, so he grabs a beer while we wait for the pizza.
