Change in Plans...heading back to WDW

My family and I (DH, DS3) along with my in-laws were booked on a DCL cruise this October out of NYC. Well, due to declining health on the part of the in-laws, coupled with our feeling that we won't get the most out of a cruise with our 3 year old at this time, we have decided to pull the plug on the cruise and head to WDW again instead.

This trip will be for just the 3 of us (no in-laws). We visited last October when DS was 2, almost 3 (and free!) and we had a pretty successful trip - a couple of issues with crowds, but for the most part, we were pretty go with the flow. We did rope drop every day and rarely went back to the parks at night.

We are booking roughly the same timeframe as last year (10/18-25). JetBlue airfare for the 3 of us is about $550! Staying at Pop Century, same as last year. Using DME and resort transportation. At the moment I purchased 6 day base tickets (no hoppers) and will make the decision to upgrade to park hoppers based on the research/schedule I work on over the next couple of months.

I've been out of the WDW loop over the past 6 months (spending more time researching DCL) and haven't yet resumed my planning or disboard surfing, so what can I expect to be different from last year? Has anything been confirmed yet about nighttime activities at DHS or AK for October? The park hours at the moment are not very late for any park, but IIRC, they weren't for the summer either until recently, right? I see lots of MNSSHPs scheduled...probably not in the cards for us. Last year we did mostly CS and that worked out well for us, any new must-try's (CS or TS)? I did see the new lounge in AK, that looks pretty good!

Also...we are newly potty trained - any tips for park touring?
