Flash is definitely a good suggestion. That helps in backlit situations.iPhone 13 Pro Max - it’s been mentioned to try flash so I’ll give that a go.
You should also pay attention to the lighting where you are. If there's light coming from one direction (it's usually brighter around the buffet area for example) then try to shoot with that bright area behind you rather than behind the character.
Feel free to ask the characters to move slightly to help your composition and lighting. Don't be afraid to stand up and get photos in the aisle. If you're quick, nobody will mind.
I travel with a DSLR and add on flash and use both in these situations. It was funny once at Plaza Inn, Fairy Godmother didn't want to turn and let me take the photo from the other direction. She was trying to help me with the lighting. But my priority (because the flash helped with lighting) was to have the pretty Christmas Tree behind her rather than the buffet.
That was the only time a character ever resisted moving to a slightly different position for my photos.
