On our cruise in April we were wanting to do the stringray adventures. The only problem is our youngest daughter is 3 the ages allowed are older than 5. has anyone had any experience with this as in what to do with our three year old while we are doing the excursion or could we hold her while we do it?

She can go to Scuttle's Cove (Oceaneer's Club moves to the island that day) while you are on the excursion.
 
You can also use the nursery services, which remain on ship during Castaway Cay, if your daughter is 3. It is a service in which Disney charges $9 per hour.

And for newbies it's good to know that Scuttles is nowhere near the water and they will not take the kids to the water. They have water-play stuff in there, but no body of water to be nervous about.
