Hey - just finished the workout and while I was doing that, the soup I made was simmering...the soup is SO good and I thought that I would share it with ya - it's a recipe like the Pasta E Fagioli from Olive Garden....(this recipe can easily be halved - the only problem is the measurements become kind of awkward to work with)
Ingredients:
2 tsp olive oil
1 lb. extra lean ground beef or ground chicken
1 small onion; chopped
1.5 cup carrots; diced
4 stalks celery; diced
24 oz. roma tomatoes; canned, diced
1 cup cooked red kidney beans (I just used a small can)
1 cup cooked white kidney beans (I just used a small can)
44 oz. low sodium low fat beef stock or chicken stock, depending on the meat you use
1.5 tsp oregano
1 tsp pepper
2 tsp parsley (fresh chopped)
5 drops tabasco
24 oz spaghetti sauce (there is a really good one from Healthy Choice that's fat free and low sodium)
4 oz. whole wheat pasta shell macaroni; or other pasta of choice
directions:
Prep: saute beef/chicken in oil in large pot until beef/chicken starts to brown. Add onions, carrots, celery, and tomatoes and simmer for about 10 minutes. drain and rinse beans and add to the pot. Also add beef/chicken stock, oregano, pepper, tabasco, spaghetti sauce, and noodles. Add chopped parsley. Simmer until celery and carrots are tender; about 45 minutes. Makes 9 qts.
I also added some garlic, because I add garlic to everything. This freezes really good. I am freezing some in some individual containers to take to work.
