Apple Pie Roll-Ups a.k.a. Apple Pie Enchiladas

So easy, so forgiving, substitutions don't ruin this dish, personalize it!

Sounds good...
And easy is good too!

Sometimes I like a challenge...
sometimes I just wanna eat... now!


4-5 medium Granny Smith apples, peeled and diced.
1 tsp cinnamon
1/4 cup sugar
1/4 tsp nutmeg
Pinch of salt
Juice of half a lemon

1 jar of prepared caramel ice cream topping

Frozen pie crust, or can of crescent roll dough, or pastry dough sheets

Roll out dough, cut into rectangles, approximately 3" x 5". This recipe is so fly-by-the-seat-of-your-pants you can change the dimensions, choose the dough, to. Set cut dough pieces aside.

Combine apples, sugar, cinnamon, nutmeg, salt and lemon juice in a sauce pan. Cook, at a simmer, until apples are fork tender.

Or better yet, buy a can of prepared apple pie filling! :)

Put 1 heaping spoonful of the cooked apples onto the rectangle of dough, and roll up, ala enchilada style. Seal the edges of the dough with a dab of water.

Place on a prepared cookie sheet, bake at 375 for approximately 11-13 minutes.

Once cooled, drizzle caramel sauce on top!
Done! Easy peezy!

Double Chocolate Oat Muffins (for people with food allergies)

Ingredients:
3/4 cup of oat flour
1/3 cup of unsweetened cocoa
2 tsp. Of baking powder
1 tsp. Of baking soda
1/2 tsp. Of salt
1 cup of unsweetened applesauce
1 tsp. Of oil (olive or palm shortening)
1/2 cup of sweetener (sucanat)
3/4 cup of enjoy life mega chunks or
1/2 cup of Enjoy Life chocolate chips

1. Grease 6 muffin tin cups. Preheat oven to 350.
2. In a medium sized bowl, combine first 5 ingredients.
3. In a separate bowl, combine applesauce, oil, and sweetener.
4. Add oat mixture to applesauce mixture and mix well.
5. Stir in chocolate chunks or chocolate chips.
6. Spoon evenly into muffin cups and bake 20-22 minutes. Muffins are done when the tops are firm to the touch.

I've never heard of sucanat, though.
Where would I find that?
Since we don't have allergies here,
could I substitute for sugar, or???


We don’t do any real traditional baking because of the several food allergies. This is a great muffin recipe. For added chocolate add both chocolate chunks and chocolate chips. I have made these for my family and they never could tell they were allergy friendly.

As to my favorite dessert recipe:

BAILEYS IRISH CREAM BROWNIES

1 c flour
1/2 c unsweetened cocoa powder
1 tsp espresso powder (opt)
1/4 tsp baking soda
1/4 tsp salt
1/2 c dark chocolate chips
1/4 c butter (half a stick)
2 eggs
1 c sugar
1/3 c Baileys Irish Cream
1 tsp Vanilla extract

Directions: Preheat oven to 350F/177C. Line an 8x8inch pan with parchment paper and lightly spritz with cooking spray, set aside.

In a medium bowl, whisk together flour, cocoa, espresso powder, baking soda, and salt until combined.

Melt together chocolate and butter either in a double boiler or in the microwave (if doing in microwave, keep it to 30 second intervals). Let cool.

Once the chocolate mixture is warm (not hot!), add eggs 1 at a time, whisking constantly to incorporate. Add sugar, vanilla, and Baileys and whisk until combined. Add the flour mixture into the chocolate mixture, folding until just combined.

Pour batter into the prepared pan and bake for 18-20 minutes.

As for the recipe- here is my favorite chocolate chip cookie recipe!

1 cup butter
2 eggs
1 cup sugar
1 cup brown sugar
Mix together
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla (optional)
Mix together again
2 1/2 cups flour
Chocolate chips (to your liking)
Mix everything together
350 degree oven for about 10 minutes or so

I'd have to check to be sure,
but I think I might make
that same recipe! :)

Yes, we don't do desktops anymore, haven't for years. We just have our laptops on tray tables in front of our recliners in front of the TV and that's where we plop our butts when we're not sleeping or cooking or cleaning.

Ugh. Doesn't sound like a lot of fun.

No, it's not. I was able to get into the old laptop, turns out it has an onscreen keyboard that I could work with to get in and the mouse still works, so I copied my pictures from the laptop to a 32gig USB drive (in batches) and transferred them to my laptop. I had also saved them on Fran's laptop, but I did that about six months ago, so I'm updating her back up now with the ones that weren't on there. Carbonite is still working slowly in the background. It really did save everything. Right now it's restoring an audio book that I downloaded a bunch of years ago. I think it's going to do the restore like 3 or 4 times because my computer had 86GB of data and now it says that it's done 19.1 of 316GB. I think I clicked on "Restore" a couple too many times! :lmao:

Okay.... but I bet you never will!!!!

I used a larger one (I have two). It was more rectangular shaped, not circular and made a double recipe. I don't remember how long it took. We were barbequeing and drinking and in and out of the pool while it cooked. I think I just kept checking it after about an hour and 15 minutes.

Here's an easy recipe for butter mochi, which is popular in Hawaii, it's a chewy type of dessert with essence of coconut, vanilla and butter. :)

Hawaiian Butter Mochi

Ingredients
  • 1 stick unsalted butter melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla
  • 16 oz mochiko flour 1 box (sweet glutinous rice flour found in asian markets)
  • 2 teaspoon baking powder
  • 1 can evaporated milk 12 oz
  • 1 can coconut milk 14 oz
Instructions
  1. Preheat oven to 350 degrees F, and grease a 9x13 inch pan.
  2. Mix the melted butter and sugar until combined. Add the eggs, one at a time, mixing well after each. Stir in vanilla. Pour in the mochiko and add the baking powder. Stir until mostly combined. Stir in the evaporated milk, stir in the coconut milk. When batter is totally smooth, pour into pan and bake for one hour. Remove from oven and allow to cool to room temperature.
  3. Remove from pan and cut into little square sized pieces on a cutting board.

Sure! Since the recipes were the first thing that I manually downloaded I have them all! I'm really not a big dessert person, mostly I cook savory dishes and dinners, but I do have a few failsafe easy desserts as I'm not a baker.

Quick Tiramisu

Yields: 1 8-inch baking dish

Ingredients

Coffee Syrup:
1 cup brewed espresso or strong coffee (made of 1 cup hot water mixed with 2 tablespoons instant coffee granules or espresso powder)
2 tablespoons granulated sugar
2 tablespoons coffee or almond liquor (optional)

Filling:
1 cup (227g/8 oz) mascarpone cheese, at room temperature
1 teaspoon pure vanilla extract
2 tablespoons Marsala wine, dark rum, or brandy (optional)
1 cup (250ml) heavy cream
⅓ cup granulated sugar
about 200g/7 oz (20-24 units) ladyfingers

Instructions

For coffee syrup: In a small bowl, combine hot coffee, 2 tablespoons sugar, and 2 tablespoons liquor. Mix until sugar dissolves. Set aside to cool.

For filling: In a large bowl, whisk mascarpone vigorously by hand until creamy and smooth. Whisk in vanilla extract and alcohol. In a different mixer bowl, whisk together heavy cream and sugar using an electric mixer until stiff peaks form. Fold whipped cream into mascarpone in 2 additions until mixture is smooth.

Assemble tiramisu: Dip ladyfingers very quickly (less than a second) into the coffee syrup and line them in one layer in an 8-inch baking dish. If necessary, break a few ladyfingers to fit them in the dish. Spoon half of the filling over the ladyfingers and smooth the top. Repeat with a second layer of coffee-dipped ladyfingers, then with the rest of the cream. Cover and refrigerate for at least 6 hours or up to 2 days.

Serve cold. Right before serving, dust the top with cocoa powder or grated chocolate (or both!).

I usually order my espresso powder from King Arthur Flour, but I've seen it in the baking aisle of the grocery store as well. You can also use instant coffee granules or finely ground coffee or espresso, but use less if using the finely ground coffee since it hasn't been brewed yet.

Am I able to cheat a bit here? I occasionally make a trifle or something fancier, but my boys tastes for dessert are simple.

My favorite dessert recipe is as follows: Buy Ghirardelli dark chocolate brownie mix. Follow directions on box. Slightly undercook by 2-3 minutes so they are extra gooey in the middle. Proceed to eat the entire pan in one sitting.
