Can you Help a Newbie with ADRs?

Hi! I've been lurking on here for about a week and decided to come out of hiding to ask for suggestions for my ADRs. My family (me, DH, 6yo DS) will be visiting WDW in early June. The only time I have been, I was in second grade and my DH has never been, so we are total newbies at this. Even though I am a total planner by nature, trying to decide on restaurants and itinerary this far in advance is stressing me out! I have all but one of my ADRs booked. We are driving in saturday morning, probably around 10ish, and will leave some time Wednesday. We have the 5 day tickets, but no park hopper. I just don't know where or when to do the last ADR, or if the ones that I do have make sense. Can someone make suggestions?

This is what I have:

Saturday - Epcot - T-Rex for dinner (this is my son's must do restaurant.)
Sunday - MK day, Cape May ADR for dinner
Monday - AK day with Tusker House character breakfast.
Tuesday - DHS day - Hollywood & Vine Breakfast
Wed - Kind of our whatever park day before hitting the road late afternoon.

Any thoughts and suggestions are appreciated!
 
I would change one of your breakfasts at the park to a lunch or dinner if you can and then use the last day for a character breakfast since you're leaving mid-afternoon. Maybe Cape May or Chef Mickey's since you don't know what park you're hitting yet? Or Ohana?
 
Thanks for the suggestion. Can you suggest something to replace one of the breakfast with?
 

Here's what I might consider.

Saturday - Epcot - T-Rex for dinner (this is my son's must do restaurant.)
Sunday - MK day, 1900 Park Fare - it is a lot of fun w/ Cinderella, Wickeds and the Prince. My son who was 5 at the time loved it. He asked Cinderella to marry him. I think you'll like just having to take monorail instead of leaving MK to drive to Cape May and back, assuming you will go back to MK.
Monday - AK day with Tusker House lunch. I say this b/c quite honestly we ate breakfast here and (8:45 ADR) and it screwed up our whole day. I would consider a late-ish lunch if you can get it.
Tuesday - DHS day - Hollywood & Vine Breakfast (no experience with this)
Wed - Kind of our whatever park day before hitting the road late afternoon. As I said, Ohana, Cape May or Chef Mickey's would be a good choice here.

Of course a lot of these are pretty popular restaurants so it might be hard to change them now.
