Can you cancel a same day FP?

Just booked all my FP for a trip in August. Doing some fine tuning now. I have 3 younger kids (7,4,4) so planning a mid-day break. I am mostly using the late morning and right after lunch for FP bookings since I anticipate rope drop and afternoons at the pool or resting.

The question is say I book a late afternoon FP for Epcot (have park hopper) but kids decide they want to stay in MK - can I cancel that day and try and rebook or do I need to wait for the time window to pass?

You can cancel up until the time for the FP, I'm certain of that. You might be able to cancel during the actual window but I'm not sure about that.
