Is there a way for us 'regular' folks to check and see if a particular room is available on a particular cruise? Or do you have to do that through a TA?

I meant, is there a website that we could go to and just enter a date and a room number and 'see' if it is open. Probably not, huh? It is probably just available to TA's.

Once you get to the date of the cruise you're interested in, the cabins available will show for you to select. (I think that's the order it goes in -- I haven't done it in a while....)
Online cruise booking engines that you can also use to locate available cabins do NOT list ALL available cabins. They usually will list up to 8 in each category, even if there are twice as many available. I don't know of any that allow you to specify a particular stateroom number in your search. As they are booked (real time), other room numbers will show if available. To find availability of a specific room number that does not show, you would need to book directly with DCL on the phone (requesting that cabin), or have your TA check with DCL for availability.
We booked directly with DCL twice, had the deck plan open and asked if specific rooms were available. If we hadn't found an acceptable room, we would not have booked.
I've found the DCL reservations people to be very friendly and helpful.
