I have frozen cheddar cheese but it's only good to cook with after. If I remember correctly it gets really crumbly.

Butter's fine; might want to put it in a ziploc if it'll be in there a long time!

I agree that the frozen cheese will be best cooked when you take it out. You won't want to slice it and put it on sandwiches because the texture will be too crumbly. But you won't tell the difference if it's baked in a casserole or on pizza.
