One thing I do is the first day I am there, I fire up the charcoal grill and cook as much meat of different varieties as we will need (unless it's like a week long trip). Chicken breasts, steaks, hot dogs, burgers, shrimp (if we are at the beach - eat those first night). That way I spend one night "cooking". I wrap up the cooked meat and keep it in the fridge then select one each night to warm up in the microwave (now THIS is camping). Then each night I spend about 10 minutes cooking the instant mashed potatoes (garlic flavor ROCKS) or a pasta salad or chips or potato salad from the grocer. And I usually add a third dish with fruit (love fruit instead of a veg).
My two boys 13 & 15 have been trained to cook the chicken, burgers, and dogs. All I do are steaks and shrimp. They like helping out and feeling like they contributed.
Not really menu related, but what the DW does is precook things like spaghetti sauce, taco mix, italian sausage for english muffin pizzas, breakfast sausage and even bacon, etc. at home and freeze it in a ziploc frozen flat (The bacon need to go into a container unless you like bacon bits for breakfast) and then it's simply thawing and heating and adding whatever goes with the frozen stuff. We also like things like veggie soup and chili and that will be made at home and either frozen for use within like two days after storage in the refer or the next day if put into the refer unfrozen.
Doing the pre-made sauces really cuts down on the cooking and especially the clean up when doing things that require making a sauce and then adding to it the main ingredients.
You can make some of this stuff at home weeks even a month or so and then just put it in the refer/freezer.
