What is the best highway (fastest, not scenic) to take from the Orlando airport to get to Cocoa Beach?

I concur...

The Beeline or Highway 528

It is a toll road...2.75. One you can have a dollar bill..the rest you just throw the change in.

It will take you 50 minutes at the most.
