Calling all Atkins dieters

I have done Atkins before with great success and started again about 2 weeks ago. Lost about 5 pounds so far. Not the best results but more than I ever lose on any other diet. DS 19 is also doing it and he really likes it. He is a good cook so he ends up cooking most of the food. :banana: DH is not on it but we manage.

Anyway, what are some of your best recipes for breakfast, veggies and desserts? The meat is no problem for supper each night. Lunch I generally end up getting a grilled chicken salad with cesar dressing which is fine. Any other lunch suggestions?

To make, or to order out?

Cobb Salad's are wonderful. All the yumminess is all low carb.

Noodles & Company will substitute any entree noodles, with Broccoli. Add chicken, or meat balls - and you're set.

Egg Fu Yung - with no Gravy. I love getting this.

But tell me, are you talking ordering, or cooking?
 
I'm lowcarbing at the moment too.

For breakfast, I am embarassed to admit, I usually just drink a cup of coffee. But if I'm hungry, flax muffins are great for on the go.

At home, I would eat leftovers or tuna patties for lunch. When I'm out, I rarely trust anything but meat over a salad with dressing on the side.
 
I'm not actually on Atkins now even though I have been. I do limit my carbs though and this has become my permanent way of eating.

I like to eat tuna salad or chicken salad stuffed in fresh tomatoes occasionally. I also treat myself to a (mostly egg white) omelet sometimes.

For lunch out... I like to vary salads. Buffets can be great too.
 

breakfast gets boring with eggs eggs eggs.... but I would look at South Beach Phase 1 recipes if you're watching carbs...I used to make a "pancake" out of eggs, cottage cheese and a few oats... with sugar free syrup
 
My DH and I have been doing Atkins since the middle of January.

For breakfast he makes scrambled eggs. I'm out of the house at 5:30am, so I usually bring hard-boiled eggs or string cheese to work. I also really like to eat fresh mozarella cheese for breakfast.

I have a small handful of peanuts for my morning snack.

For lunch, I either take leftovers from dinner or hit up the salad bar the the grocery store across from my office. They have this great taco salad - taco meat, sour cream, cheese, and lettuce layers. I also get a salads from Chick-Fil-A and occasionally will get an order of nuggets with a side salad.

If you google "low card recipes" tons of sites come up.

We also make crustless quiches a lot and eat a lot of steak and wings! And cheeseburgers without the bun.

For an occasional dessert, we eat frozen berries topped with home-made splenda whipped cream.
 
for breakfast I'll usually have an egg white omelet with veggies in it. for meals on the run I usually have a low carb protein shake.
 
1 Minute Flax Muffin

1/4 Cup - Flax meal
1/2 tsp - baking powder
1 packet splenda or truvia (or whatever sweetener you like)
1 tsp - cinnamon
1 large egg
1 tsp - butter

Put dry ingredients in a coffee mug. Stir, and add egg & butter, mix well. Microwave on high for 1 min. When done, it should pop right out of the cup, slice and add butter.

You can also add fruit like bananas or blueberries to the mix. Some folks like to use low carb syrup too.

I pulled this recipe from a low-carb site, I really like them. I add them on induction (w/o fruit) and also on maintenance with side of cottage cheese.

Apparently, and although, you can eat unlimited amounts of protein, you cannot (or at least I cannot) eat unlimited amounts of Hebrew National salami. :sad2:

I don't care if I should know better. It seemed like a good idea at the time.
 
Thanks. It has been a while since I was seriously into Atkins so I forget about the cheese sometimes. Went to Sam's today and bought a big bag of pepper jack cheese cubes. They are so good. Also found some Atkins bars that are really yummy. I am limiting myself tho to one every other day. Not sure how the sugar alcohol will affect me and the whole ketosis thing.

I like ideas for eating out at lunch though. Tonight had some roast I had cooked all day in the crockpot. Not that hungry.
 
Meat rolls; simply roll your favorite lunch meat layered w/ cream cheese. You can add chopped or sliced vegies or herbs also. Turkey, cream cheese and avocado is yummy.

I used to love when my friend would serve ham that way w/ cream cheese and olives as an appetizer at her parties. So when I started low carbing it years ago, I sort of adapted this idea for my lunches.

I've been thinking lately that it may be time to start eating this way again.
 
I make a large pot of turkey meat (adding 1/2 packet of taco or fajita seasoning for 2 lbs meat, some water or tomato sauce if you prefer), usually Sunday. Then I prepare small tupperware bowls & take to lunch...sometimes I add a bit of fresh spinach, cilantro, hard-boiled egg or sour cream before nuking. Sometimes having a WARM lunch fills me more.

There is a recipe there for cream cheese muffins which taste like mini cheesecakes and they can be changed up many different ways.

These sound good. Where do you buy flax meal?
 
One of my favorite Atkin breakfasts is Mock Danish.

Mock Danish

2 oz cream cheese (soften in microwave)
1 egg
1 tblspn splenda
1 tsp lemon concentrate
1/2 tsp vanilla

Mix softened cream cheese and egg.
Add remaining ingredients.
Microwave on high for 2 minutes.

I also make an atkins friendly cole slaw that is really good. I put the cole slaw inside some turket breast or deli meat and roll it up with some swiss cheese and its very tasty.

My mom eats these "muffins" mulitple times a week. I tried it once, and it did NOT agree with me. The rest of the story is definately TMI ;) And to make matters worse, the "muffin" didn't even taste that good and had a very grainy texture.

:lmao: :lmao: Sorry but this made me laugh. We were at a Shoney's one time on the way home from vacation and this woman was waiting at the breakfast buffet bar for them to bring out more bacon. Then she proceeded to promptly fill her entire plate with the entire contents of the pan. The guy working the salad bar was like..:eek:! I turned to DH and said "Guess she's low carbing it, her own way." :lmao:

I buy mine in the baking section of the supermarket. Look for ground flax seed. I buy Hodgsen's Mill in a brown box. There are also other kinds. I also put it in my yogurt and it gives it a nutty flavor! Yum!!!
