cabbage - what to do with it?

My DH has planted me a wonderful garden. the only problem is we are clueless. Do we wait till the cabbage becomes a head to pick or do we take leaves from this like the swiss chard and lettuce. Did I mention that they are huge. I really can't see them turnng into the nice head of cabbage I buy for St Pat's day. Oh and My Broccoli is huge too. Nothing but leaves, do these heads grow later or are they duds? Please help. Thanks,

You would pick them when they are a head. I think after that, you can just pull out the plant since nothing else will grow from that plant.
