Cheap potatoes and cabbage this coming week in grocery stores - My local store is selling cabbage at 7 cents a pound! Avocados are in peak season too. So I'm stocking up. You can freeze avocado in pureed form which I can use for guacamole later. I'm going to try to freeze shredded cabbage for stir fry and egg rolls. Any other good ideas for cabbage based meals? I use some as the lettuce in in lettuce wraps but it only uses a handleful of leaves. Potatoes I've got soup+stew, baked, mashed, potato skins, shepard's pie, pot pie any other good potato uses? Anyone freeze homemade fries?
 
The two things I use cabbage for are for "runzas," sauteed hamburger, onion, and cabbage wrapped in bread dough. And as a side dish, stir fried, when I serve meet with a flavoring like teriyaki or Korean style.

I know my dad makes Romanian cabbage rolls called Sarmale that are really good.
 
how do you freeze avocados without browning..add a bunch of lemon juice?
 
I love to cut cabbage really thin and saute it - use it in place of pasta! Little cayenne, salt, pepper, mmmmm!!:cool1:
 

my mom used to make stuffed cabbage. She would steam the cabbage a little to make it more pliable then mix up hamburger and rice, roll it up in the cabbage and pour spaghetti sauce over the top and cook it in the oven. If you don't eat meat, she recently made it with black beans for my dad as he is cutting back on meat and he said it was still really good.
 
Coleslaw, Eggrolls are an awesome use for cabbage I make mine with shredded cabbage,bean-sprouts, shredded carrots, onion diced really small,and ground pork with soysauce as the flavoring. after I make the mix it freezes awesome!
Cabbage and potatoes also make a great boiled dinner with ham or corned beef.

Lime juice works fine - about a teaspoon per avocado, I use it in my quacamole recipe anyway so it is one more step saved.
 
I make a cabbage casserole that tastes like stuffed cabbage but without all the work. Google weight watchers unstuffed cabbage. I often make several casseroles and freeze them so I know it works (increase the liquids a bit though).

We are making homademade saurekraut from 20lbs of shredded cabbage (cost about $6) in a foodgrade 5 gal bucket I bought at Lowes. Discussing the fermenting process, why does the cabbage shrink so much blah blah....anyway, lots of info out there on how to do this and will taste great when done!!

ETA You can make your own frozen shredded hashbrowns. Bake potatoes for an hour and cool completely overnight in the fridge. Shred on a coarse cheese grater and freeze flat.

I made homemade runzas for the first time last year. The dough was a little sweet, but they are really good. I haven't made it since because my son wasn't a huge fan. He doesn't care for onions.

Pocomom- Which store is this? I got cabbage for .19 per pound and thought it was a deal. If I can get it for seven cents per pound I just might make sauerkraut.

You can make a vinegar based coleslaw and freeze or can it. The recipe I have is a bit on the sweeter side, but it tastes great.

Sauerkraut is another way to use cabbage. It's not that hard. The biggest part is waiting for it to ferment. It can be canned or frozen.

Potatoes can be dehydrated if you have a dehydrator.

We made and froze Cabbage Soup and Stuffed Cabbage Rolls
We also got a great deal on 10 pounds of spuds
Husband baked them all, then scraped out the centers
He made awesome baked mashed potatoes and froze small portions, delicious!
He then made and froze potato skins with the shells, added cheese and bacon
Great food, great guy!
 
Red beans and cabbage is a meal I make all the time. Saute shredded cabbage in a bit of butter, add in cooked red beans and either cajun or Mexican seasoning depending on what sounds best at the time (I mix my own and keep on hand) and a bit of water. Allow to simmer until cabbage is tender. Sometimes I melt in cheddar cheese. I'm telling you, it doesn't sound like much but it is so yummy.
 
Another thing is apple bacon cabbage. Cut up cabbage and onions and saute in a little butter, add in a bit of apple juice, diced apples, and cooked crumbled bacon. Simmer until apples, onions and cabbage are tender. Cabbage is my favorite veggie so I have all sorts of ways to cook it.
 
Last one...I'm not sure what they are called but you cook up ground hamburger with shredded cabbage and onions. Add in some cheese and use as a filling inside fresh bread dough. Bake and serve as cabbage "burgers".
 
Good Old Polish Haluski = Cabbage & Noodles!

Melt a stick of butter in a large no stick pot...
Dice up a medium size onion or not...and cook in butter over low heat
Par boil the head of cabbage and cool...
Peel off the large outer leaves for stuffed cabbage rolls...
Cut up cabbage(removing core)and add to butter and onions...
Add salt, pepper and a tsp of sugar - to your own taste...
Cook over low heat for an hour or so until "translucent" not browned...
Boil up a pack of wide egg noodles or better yet make your own noodles...
Add cooked noodles to the pot...
Put on some polka's and enjoy...

When I make stuffed cabbage I freeze the whole head of cabbage, the night before I want to make stuffed cabbage take it out of the freezer and as it defrosts the leaves just peel off. So much easier than when you boil the cabbage.

Here is another thing that I do with cabbage....I have no recipe so I'll try to explain it the best I can:

cut up cabbage (little bit thicker that when you slice it) 1 or 2 carrots chopped up put it a skillet with some olive oil (you can add some chopped onion also) cook it down a little then add 1 or 2 cans (28oz) of chopped tomatoes and cook down, stir occasionally....it will take a couple hours to cook but it is soooooo good.
