what time do the buses stop running from the parks? i.e., If MGM closes at 7PM, when would the last bus leave the park to go back to the hotels?

Typically, 1.5 hours. But there will be a bus waiting until all the guests have cleared the park. That bus will WAIT until all guests have left the park.

So, if MGM closes at 7PM, you get on the bus at 9pm, you will wait until the park is cleared.

Now, if you are planning to walk to MGM from the BW, be aware that if the park is cleared earlier, there will be no bus service.
