With the Superbowl next Sunday and Daytona on the 19th my mind is back to Buffalo wings.

I have been testing different sauce recipes on the net and STILL havent found one that makes me say WOW.

Anyone out there have any good recipes for Buffalo wings?

Also do you like to bake fry or grill yours?

Tonite we tried 3 different batches we liked 2 of them but both were missing that special something.
 
When my husband makes them he uses the breading and sauce from Hooters, which he can usually find at our SuperWalmart. He breads them and then deep-fries them. Lastly he rolls them in the sauce and they are delicious!
 
I use Franks Wing Sauce. I fry them up and then toss them in a mix of butter and wing sauce. The recipe is on the back of the bottle. Its in the same aisle as tabasco sauce.
 

All we do:
Clean the wings, deep fry them then in a sauce pan combine real butte and hot sauce till desired heat! and pour over!

I also bought teryiacki (sp big time) sauce from a home sales chain, simple tasteful I think or something like that.
Cleaned the wings, put in a pan and pour the sauce over and baked them for about an hour...very yummy!
 
Maybe one of these will help. I have 2 different recipes from the Polynesian.

Sticky Wings
Michael A. Thompson, Chef de Cuisine, Disney’s Polynesian Resort
Yield: 4-5 servings

Sticky Wings:
10 ea Wings
3 oz Wing Sauce
1 ea Green Onion, chopped
1 pinch White and black sesame seeds
1 oz Mustard sauce
8 oz Canola Oil

1. Heat oil to 350.
2. Cook wings until crispy.
3. Reduce sauce until sticky
4. Toss wings in sauce.
5. Garnish with green onions and sesame seeds.
6. Drizzle with mustard sauce.

Sticky Wing Sauce:
½ lb Brown sugar
5 oz Minced garlic
1¼ c Soy sauce

1. Mix well.

Sticky Wings Poaching Liquid
22 ea Chicken wings
¼ qt Soy sauce
½ lb Brown sugar
½ lb Minced garlic
¼ qt Water

1. Heat everything but wings and bring to a boil.
2. Add wings and cook for 20 minutes.
3. Remove, cool wings, and discard liquid.

Honey Coriander Chicken Wings
from 'Ohana, Polynesian
Serves: 6 to 8

For the wing seasoning:
1 tablespoon kosher salt
1 tablespoon ground paprika
1 tablespoon sugar
1/4 teaspoon pepper
1/4 teaspoon turmeric
1/4 teaspoon cinnamon
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
5 pounds chicken wings and drumettes
2 to 4 tablespoons vegetable oil

For the coriander wing sauce:
1/2 cup honey
1/4 cup low-sodium soy sauce
1 tablespoon cornstarch
1/2 tablespoon chili powder
1/2 tablespoon fresh lime juice
1/2 tablespoon ground coriander
1/4 teaspoon ground ginger

Cover a cookie sheet in foil and set aside.
Preheat the oven to 500 degrees.
Make wing seasoning by placing all ingredients (through cayenne pepper) in a small bowl and using a whisk to incorporate.
Put the chicken and 2 tablespoons of wing seasoning in a large bowl. Add enough oil to coat the chicken evenly and mix well with your hands.
Spread the seasoned chicken in a single layer on prepared cookie sheet. Bake for 18 to 20 minutes or until the thickest part of the chicken reaches 165 degrees.
Meanwhile, place all wing sauce ingredients in a large saute pan and bring them to a gentle simmer over medium-low heat. Cook and stir until thickened.
Using tongs, transfer the cooked wings into the sauce.
 
DH like to dredge them in a flour and pepper mixture, deep fry them and then soaks them in Louisiana Red Hot sauce overnight. Reheat before serving.
 
Hands down best wings are deep fried (no breading) and then dredged in Frank's Red Hot mixed with half the butter it says on the back of the bottle.
 
I use Crystal hot sauce and a stick of butter with a little garlic powder and cayenne thrown in. I deep fry my wings without breading and toss them in the sauce. I'm not sure if yu can get Crystal in NH, but if you can't, Texas Pete is also very good. Do you like blue cheese dressing with your wings? If so, I have a GREAT recipe for it.

Now my mouth is watering...but at least I'm reminded that I should pick up some wings this week. Hubby will be thrilled if I make buffalo wings for Sunday.

Blue Cheese Dressing (keeps in fridge about 5 days)

1 egg
1 c. chopped onions
1 tsp. minced garlic
2 c. vegetable oil
1/2 c. buttermilk
2 tsp white pepper
1 tsp. salt
1/2 tsp. cayenne pepper
1/2lb. blue cheese, coarsely crumbled. (I like to use Maytag when I can find it, but any high quality blue will do. - Look! I made a rhyme!)

In a food processor or blender, combine the egg, onions, and garlic. Process for a few seconds. With the machine still running, add the oil in a slow, steady stream. Add the buttermilk and seasonings and process for a few more seconds until smooth. Transfer mixture into a large bowl and add the blue cheese. Mix with a metal whisk, but leave some lumps. Refrigerate at least 1 hour prior to serving.
