Breakfast Casserole??? Recipe?

I have to bring a breakfast casserole for the Varsity Football breakfast on Saturday. I have eaten a few over the years with bread, eggs, ham & cheese etc. but I have never made one. Had one that was a hashbrown casserole also, again, no recipe............

Any good, easy (prepare the night before & bake in the morning) type recipes that you all would be willing to share?
 
Preheat over to 350. Take a pyrex type pan--any size but you'll probably use an 8x13 or so for your group.

Spray the bottom with Pam or similar.

Cover the bottom with 1/2-1" of shredded potatos (uncooked hash browns)

Pour either scrambled eggs or Egg Beaters over that so it's about 1/2" higher than the potatos.

Add a layer of either cheddar or Jack and Cheddar.

Shake some salt and pepper and tarragon onto the cheese

Now you can add a layer of any combination of diced peppers, bacon bits, and onions if you'd like. If not, sprinkle on minced onion or onion powder.

Add another layer of eggs.

Top with more cheese.

Make sure there's at least 1/2-3/4 inch from the top of the uncooked casserole to the top of the pan.

Bake for 50-60 minutes depending on the size of the pan--larger pans need a little more time.

This is a make-ahead recipe that I only make once a year, on Christmas. There is nothing healthy about it, but I guarantee a bunch of football players will devour every bite.

1 tube crescent rolls
6 eggs
1 cup milk
1 roll maple flavored sausage, browned and drained
1/2 lb bacon, cooked and crumbled (you can use about half a jar of bacon pieces from the salad topper section of the store to save time)
1/2 cup green onions, diced
1 8oz bag shredded cheddar cheese
1/2 tsp pepper

Use an ungreased 9x13 dish. Unroll the crescent dough and press into the bottom of the pan, sealing the seams. Beat the eggs with the milk, and dump all the other ingredients in. Pour into the pan on top of the dough. Cover and refrigerate overnight. In the morning preheat your oven to 325 and bake for about 45-50 minutes, or until a knife inserted into the center comes out without egg goo on it.

It's so good. The maple sausage adds a hint of sweetness, and it is oh so yummy.

Mine is slightly different----
I crumble and cook sausage and add on top of the potatos and then add all the seasonings to the scrambled eggs and pour over top and cover with shredded cheese.- Yummy!

Anyone know of one using bread placed in layers I think? Probably similar to the cresent rolls but thicker.

Maybe I'll make 2 - 1 with the potatos and one with the cresent rolls. It's not like it will go to waste:lmao:
 
my husband doesn't eat onions/peppers so my hashbrown casserole is pretty basic, but it tastes great

1 bag of frozen hashbrowns (or tater tots)
3 cans of cream of chicken (mushroom, etc) soup
1 medium tub of sour cream
1/2 stick melted butter

mix all together and place in baking pan

2 cups of corn flakes
2 cups of shredded cheese
1/2 stick melted butter

mix together and spread on top of hashbrown mixture, bake at 350 for an hour or until corn flakes are nice and brown

I don't know many good recipes...but this is one of my favorites.

Plantation Casserole

Brown 1 lb. sausage with 1 small chopped onion.
Prepare 2 c. cooked Minute Rice

Spray 9x13 baking pan with Pam. Cover the bottom of the pan with 1 c. Rice Krispies cereal.

Add cooked sausage/onion mix and cover rice Krispies.

Add 2 c. cooked rice

Sprinkle 1 bag of grated cheddar cheese over the rice.

In a small bowl, mix 1 can cr. of mushroom soup, 3 eggs, 3/4 c. of milk and a dash of salt and pepper. Whisk together and pour over the cheese. Poke holes in the top of casserole with a knife or fork so that the mixture can seep down into the rice.

Let stand in the refrigerator overnight, bake at 350 degrees for 30 minutes. It's yummy!!
 
OMG I am SO making one of these (or some variation) this weekend just for me. I luz me some breakfast food.:)

Sorry, uncooked! Just mixed up like you would to make scrambled eggs.

Here's a different one- it's very yummy French Toast!

1 stick butter
1 c brown sugar
2 T. dark corn syrup
1 loaf French Bread, cut into thick slices (I slice the bread, then cut the slices in 1/2 or even 1/3 for ease in serving)
5 eggs
1.5 cup milk
2 tsp. vanilla
pinch nutmeg

Cook butter, brown sugar, and corn syrup until the sugar is dissolved - pour into 9x13 pan (spray the pan with non-stick first to avoid a messy clean up!). Layer the bread slices on top of the syrup mixture. In a bowl, mix eggs, milk, vanilla and nutmeg. Pour over bread slices. Cover and refrigerate overnight. Bake uncovered at 350 for 45 minutes. I usually sift a little powdered sugar over the top before I serve it!
 
I cut this one out of the paper at least 25 years ago from a bed and breakfast cookbook. When this is on the table, it's Christmas morning!

1 can crescent rolls
1 roll sausage
8 oz. shredded cheddar
4 eggs
salt and pepper

Cook sausage until brown and crumbly. Drain. Layer crescent roll dough in the bottom of a 9x11 dish. Push to edges. Sprinkle with sausage and cheese. Beat eggs with salt and pepper, pour over sausage and cheese. Bake at 350 for 20 minutes or so.

I cook the sausage ahead of time, all that's left to do in the morning is throw it together.
 
just made this for dinner last night
butter a baking dish (mine is a 10in square one I believe)

toss together
8 slices bread (I use whole gran multi grain bread) cut into cubes
2 cup shredded cheese (I just pepper colby)

beat together 1 dz eggs 1/2 cup milk 1tsp salt and your chioce of seasonings (last night I used about a tsp of red chili garlic sauce)

pour over bread/cheese mixture

bake 350 degrees for 1 hr

Can be refrigerated over night, if so then place pan in cold oven and cook for about an hr and 10-15 min


You can add sauted onion, crumbled bacon, sausage, ham etc. Last Night I just pan broiled bacon in the oven the last 30 min the casserole was cooking.
 
People love this. If you like a little bit of a kick, use the double strength dry mustard.

Sausage and Egg Casserole

12 Eggs
1 qt. Milk
1 loaf of day old bread, crust removed (I let sit out overnight)
1 pkg. Breakfast sausage
4 oz. Mild cheddar cheese, shredded
4 oz. Sharp cheddar cheese, shredded
1 ½ tsp. Salt
1 ½ tsp. Dry mustard
½ tsp. Pepper

Brown the sausage. In a separate bowl whisk eggs until fluffy. Add milk and spices. Remove crusts from bread and break into bite size pieces. Put bread into 9x 13 casserole dish, then sausage and cheese. Pour egg/milk mixture over top, cover and refrigerate overnight. The next morning, cook for 75 minutes at 350 degrees, until golden brown and a toothpick comes out clean.
