Does anyone have a good and EASY recipe they care to share. TIA :goodvibes
 
Here is an easy dish that has become a family favorite at our house! We ALWAYS have it Christmas morning and Easter morning ... and once in a while in between. :goodvibes

EASY EGG BAKE

2 c. cooked ham (or sausage)
8 oz. shredded cheddar cheese
8 slices bread, torn in pieces or cubed (or use up leftover hot dog/hamburger buns, day old or 2, 3 is fine)
6 eggs, slightly beaten
2 cups milk
salt & pepper
2 cups crushed corn flakes
1/2 c. melted margarine.

1. Add milk to eggs.
2. Mix egg mixture, salt & pepper together.
3. Put bread pieces in bottom of sprayed 9x13 pan.
4. Sprinkle ham over bread & sprinkle cheese over ham.
5. Pour egg mixture over all.
6. Cover pan & refrigerate overnight.
7. The next morning, take pan out of frig an hour before baking.
8. Combine 1/2 c. melted margarine & crushed cornflakes. Sprinkle over egg dish.
8. Bake at 350 degrees for 45-50 minutes. Watch to be sure cornflakes don't brown too quickly. May want to cover with foil for first 20 minutes or so.

Easy and VERY yummy!
 
I make this every Christmas. The family loves it.

3 c. frozen hash browns
1 lb. sausage
1 med. chopped onion
12 eggs, beaten
2 c. milk
4 c. grated Cheddar cheese
Garlic salt
Pepper

Cover bottom of greased 9 x 13 inch dish with hash browns. Brown onions with sausage; drain and spread over potatoes. Cover with cheese. Mix eggs and milk. Season to taste. Pour over mixture in dish. Refrigerate overnight. Bake 50 minutes at 350 degrees.
 

This is from the folks at America's Test Kitchen. It can be assembled the night before so all you have to do is bake it in the morning.

Make-Ahead Breakfast Casserole Serves 8 to 10

1 (14-inch) loaf Italian bread, ends trimmed
1 pound breakfast sausage, crumbled
1 small onion, chopped fine
3 cups shredded extra-sharp cheddar cheese
12 large eggs, lightly beaten
4 cups whole milk
1 1/2 teaspoons salt
1 teaspoon pepper
1 tablespoon Frank's Red Hot hot sauce

1. Toast Bread

Adjust oven racks to upper middle and lower middle positions and heat oven to 400 degrees. Slice bread in half lengthwise, then slice each half crosswise into 1/2-inch thick pieces. Spread bread in single layers on 2 baking sheets and bake until golden, 15 to 20 minutes, flipping bread and switching and rotating sheets halfway through. Let cool 15 minutes.

2. Brown Sausage

Crumble sausage and cook in a large skillet over medium heat until no longer pink, about 5 minutes. Add onion and cook until golden, about 5 minutes.

3. Assemble Casserole

Grease 13 by 9 inch baking dish. Shingle half of bread in prepared pan so that the edges overlap slightly. Top with half of sausage mixture and 1 cup cheese. Repeat with remaining bread, remaining sausage mixture and remaining cheese.

4. Soak and Weight

Whisk eggs, milk, salt, pepper and hot sauce in large bowl. Pour evenly over casserole. Wrap casserole with plastic and place weights on top (cans, broth boxes, another baking dish, etc.) This weight will help the egg-milk mixture distribute evenly through the casserole and avoid dry spots. Refrigerate for at least 1 hour and up to 24.

5. Bake Casserole

Adjust oven rack to middle position and heat oven to 350 degrees. Let casserole stand at room temperature while oven is heating. Remove weights, unwrap casserole, and bake until the edges and center have pulled and top is golden brown, about 1 hour. Let cool 10 minutes. Serve.

Variations

Breakfast Casserole with Chorizo and Pepper Jack: Replace bulk pork sausage with 1 pound chorizo sausage, halved lengthwise and sliced thin, and replace cheddar cheese with 3 cups shredded Pepper Jack Cheese. In step 2, add 1/4 cup chopped fresh cilantro to sausage mixture once it has been removed from heat.

Breakfast Casserole with Italian Sausage and Fontina: Replace bulk pork sausage with 1 pound hot or sweet Italian sausage, casings removed, and cheddar with 3 cups shredded Fontina cheese. In step 2, add 1/4 cup chopped fresh basil to sausage mixture once it has been removed from heat.

Looks like the Christmas Morning Wife Saver that my mom makes on Christmas Eve (daytime) but I don't think she breaks up the bread, I think she puts a layer down in the pan and then adds the rest of the filling and then adds another layer of bread and then pours the egg mixture.

I don't eat it so I can't tell if it's the same. I will find out what cookbook she got it from in the morning.
 
egg dish
7 eggs
1lb cottage cheese ( small curd)
1lb shredded mont jack cheese
4oz cream cheese
2 tsp sugar
1/2 cup flour
1tsp baking powder
1 cup milk
1-2 tbsp chives
1/4 cup melted butter

mix eggs and all the cheese together with electric mixer;add butter & sugar & milk;add flour,baking powder and chives. place in greased baking dish & cook at 350 for 1- 1 hr 15min. may prepare night before.
 
I make this dish the day before and pop in the oven while we are opening presents. So easy and very yummy!!! I serve it along with Pillsbury Cinnabon Rolls and fresh fruit, coffee & juice.

Egg Dish (Brunch for Six)

10 eggs
1/4 cup butter, melted
2 1/2 cup milk
8 (or more) slices white bread (or whatever you have)
2 1/2 cups extra sharp white cheddar cheese - shredded
1 tsp salt
1/2 lb bacon cooked and crumbled
1/2 tsp dry mustard

Butter bottom of pan with some of the melted butter.
Trim crust off of bread and butter both sides with melted butter, cut each
slice in half and cover bottom of 9x13" pan.
Sprinkle cheese over bread.
Sprinkle cooked and crumbled bacon over cheese.
Mix egg, milk, salt, and mustard together.
Pour over bacon.
Cover and refrigerate overnight.
Before baking, let sit at room temp for 10-15 minutes.
Remove cover and bake at 350 degrees for 30 minutes or until knive inserted comes out clean.
 
I just made 3 quiches. I undercook just slightly and pop them back in the oven in the morning. Awesome

Breakfast Cake

Family loves this it is wonderful!

10-biskits
1 lb- maple ground sasuage
cheddar shredded cheese
6- eggs

in bunt cake pan layer 5 biskets on bottom. Place browned sasuage on top of biskits, then layer cheese on top of that. Layer the next 5 biskits. Top with the 6 scrambled eggs and some butter. The eggs will fall in the wholes. Cook at 350 for 1 hour or until nice and brown....yumm
 
Our favorite is Eggnog French Toast:

6 eggs
8 slices 1 inch thick bread (Texas Toast)
1/3 cup sugar
2 cups eggnog
1 teaspoon nutmeg
1/2 teaspoon cinnamon
2 tablespoons unsalted butter

Christmas Eve:
Place bread in single layer in 13 x 9 x2 pan (I use disposable pans - much easier to clean).
Whisk eggs and all other ingredients together.
Pour over bread, turn slices to coat. Cover with saran wrap and refrigerate overnight.

Christmas morning:
Preheat oven to 400 degrees. Bake 10 minutes, turn slices, bake another 10 minutes or until golden brown.

Super easy and very yummy!!!
 
Baked Eggs

*Make atleast a day ahead of time

8 slices of white bread cubed (I just tear up)
12 slices of cheese (original recipe calls for American cheese, I use 2% sharp cheddar)
7 eggs
14 oz milk
1/4 tsp dry mustard
1/2 lb bacon (I use 1 lb thick cut)

In a greased 9x13 pan, spread out 1/2 of bread, then 6 slices of cheese, then bread and cheese again.
Mix together eggs, milk & dry mustard. Pour over bread & cheese.
Cover and place in refrigerator overnight.

Next morning, preheat oven to 325. Bank uncovered for 45 minutes. Remove from oven. Top with bacon and then bake an additional 15 minutes.

Slices can be reheated in the microwave.

When DD was born 12/20 (planned c-section), I made this on 12/19 and stuck it in the freezer. DH took it out on 12/24 morning and refrigerated. We baked it Christmas morning just fine.

I serve this with coffee cake and/or hashbrown casserole. YUM.
 
question..5 cups of bread cubes? what kind of bread do u use? Can i use white bread? how many slices..if you make it the night b4, it does not get too soggy? thank u

I usually use a good quality bread, like Italian (the unsliced kind from the bakery). I just bought my loaf today...$2 at Wegman's. I cube up the whole loaf, and put it in the pan and add the egg mixture. When you bake it the next morning, it cooks up and has the consistency of french toast. It is not soggy at all.
 
This is my favorite dish to make for breakfast entertaining. It is Swiss bacon hashbrown. Its very yummy and I make it the day before and just bake it at the last minute.

2 bags of frozen shredded potatoes (hashbrowns)
1 lg. sweet onion, chopped
1 lb. bacon cooked and cut into bite size pieces
2 cups of shredded swiss cheese
butter and veggie oil
salt and pepper or season salt

In a large skillet saute onions in a little butter until lightly browned, then set aside. In the same skillet cook the potatoes in a little butter and oil until they are browned, you will have to do this in batches or use a couple of pans. Add salt and pepper or season salt to taste. After they are cooked place the potatoes in a large rectangle casserole dish. Gently combine them with the onions and spread into an even layer. Next arrange bacon pieces on top the potatoes, cover and refrigerate. When you are ready to finish and serve, preheat oven a 350 then cook for 15 minutes, top with cheese and cook for 5-10 minutes longer to melt cheese.

This sounds perfect for us!! I'll make some cinnamon rolls and have some juice to go with it! YUM!!! Silly question, do you use frozen hash browns or do you thaw them out first?
