Last Christmas there were threads with Christmas morning breakfast casseroles and Monkey bread on the dis boards. I can't find what I did with my recipes. Anyone have the breakfast casserole recipe with sausage, egg and hashbrowns? How about the Monkey bread with biscuits and butterscotch pudding? These two items were a hit on Christmas morning.

Tradition here is Paula Dean's Breakfast Casserole. I make it with Challah bread, and I only use half the praline topping. Delish!

I have a couple that I would gladly share with you...
Farmer's Casserole
3 cups frozen shredded hash browns
3/4 cups shredded cheddar cheese
1 cup diced fully cooked ham--I find it in the meat section
4 eggs
1 can evaporated milk
salt and pepper
Place potatoes in greased 8" square pan
Sprinkle with cheese, ham
Beat eggs, milk and salt and pepper. Pour this mixture over items already in pan
Cover and refrigerate over night
Remove from refrig. 30 minutes before baking
Bake uncovered at 350 for 55-60 minutes until knife comes out clean.
I have baked this the day before and just warmed it before serving..It doesn't loose anything in the taste
Also, French toast casserole
this is another favorite
1 loaf of 12oz french bread
8 large eggs
2 cups milk
2 cups half and half
2 teas. vanilla
1/2 teasp. nutmeg
1-2 teasp of cinnamon
1/2 teasp mace
Heavely butter 9x13 pan
Fill pan with sliced bread--I cut it any old way These will fill the pan
Mix- eggs, milk, half and half, vanilla and spices
Pour over bread. Refrigerate over night
Topping: 3/4 cup soft butter
1 1/2 c.brown sugar
3 tablesp. dark corn syrup
chopped nuts if desired
Blend these ingredients together and set aside until morning
The next morning take out and drop the topping on top of egg and bread mixture. Bake at 350 for 50 minutes..This will puff up and get golden brown.
If you put the topping on the mixture before you put it in the frig overnight, don't worry about it, I have done it many times It is so easy and it is delicious!!!

1 roll bulk sausage (I use pork sausage)
1/2 tsp of italian seasoning
4 oz cream cheese
1 1/2 cups shredded cheddar cheese
1 roll of refrigerator croissant rolls

Brown sausage in frying pan until cooked through and drain fat
Add italian seasoning as meat is browning

Once sausage is cooked, add cream cheese into sausage mixing as it melts
Blend in cheddar cheese to complete "filling"

Meanwhile, lay croissant roll triangles out in the shape of a rectangle and press seams together. Roll out into a larger rectangle using a rolling pin (or I just use a round drinking glass). On each long side of the triangle, cut the dough into 1 inch wide strips leaving about 3-4 inches uncut in center of rectangle.

Spread filling in the middle of the rectangle and fold the strips over alternating to look like a braid.

Brush with egg and bake according to the croissant roll heating directions (usually 350 degrees for 15 minutes).

My family likes this so much that I make two! I'm making the filling the night before this year.

Sausage and Egg Casserole
This has been our Christmas breakfast tradition for 20+ years.

6 eggs 1 lb. cooked, drained, cooled sausage
1c. milk 1c. grated sharp cheddar cheese
1c. half & half 6 slices day old bread, crust removed,
2 tsp. dry mustard buttered on both sides

Spray a 9x13 casserole dish with Pam and then line with bread. Layer on sausage and then cheese. Beat together other ingredients and pour over bread, sausage, and cheese. Refrigerate over night. Bake uncovered in preheated 350 degree oven for 25 to 30 minutes. Serves 6-8 people (or me for about three mornings).


Baked French Toast Casserole Recipe courtesy Paula Deen

1 loaf French bread (13 to 16 ounces)
Butter, for pan
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons sugar
1 tablespoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows

Slice French bread into 20 slices, 1-inch thick each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices.
In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.

The next day, preheat oven to 350 degrees F. Spread Praline Topping evenly over the bread and bake for 45 minutes, until puffed and lightly golden. Serve with Raspberry Syrup.


Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Combine all ingredients in a medium bowl and blend well. Spread over bread as directed above.

Monkey Bread
We make this every Thanksgiving morning and eat it while watching the parade. It is delicious (and terrible for you).

4 cans of pillsbury biscuits
2 cups sugar, divided
2 sticks of butter
3 heaping tablespoons of cinnamon
raisins or nuts (optional)
Angel food pan


Preheat oven to 350. Put angel food pan on a cookie sheet with sides in case of leakage. Cut 2 cans of biscuits into quarters. In a large storage bag mix 1 cup sugar and cinnamon. Take a few biscuit quarter and throw them into the bag - shake to coat - put coated biscuits into angel food pan. Repeat until you are finished with 2 cans. Sprinkle in raisins or nuts if desired. Put butter and 1 cup sugar in a microwave safe container. Heat until melted and continue to heat and stir until thickened. Pour half of the butter/sugar mixture over the biscuits. Cut other cans of biscuits and repeat prior directions - pour remaining butter sugar over the top. Bake for 40-45 minutes - until top is browned. Take out of oven and turn over onto serving platter.

what goes around, comes around!
 
If you don't have a bundt pan for the monkey bread (like me) I used an foil center lightly oiled in a 9x13 and it worked great :thumbsup2

Overnight Brunch Casserole

1 28oz pkg frozen O'Brien potatoes
2c Colby-Jack cheese shredded
8 eggs
2c milk
1/4c flour
2tsp. seasoned salt (or to taste)
1/2 pepper (or to taste)

Arrange potatoes in a greased 9X13" pan. Top w/ 1c cheese. In med bowl whisk eggs with milk, add flour & seasonings. Pour over potatoes. Cover an put into refrigerator overnight. Uncover and bake at 350 for 30 mins. Top with remaining cheese and bake another 10-15 mins or until top is golden brown. Let stand 5 mins before serving. 10-12 servings

My neighbor makes this for her Christmas morning, she she says it is great. Weird combo though.

Forgotten Souffle

10 slices of white bread, cubed
3c grated Cheddar cheese
2c broccoli flowerettes, blanched
1/2c chopped onion and/or chopped green or red pepper, sauteed
1c fresh mushrooms sauteed in margarine (optional)
2c precooked ham, cubed
12 eggs
3c milk
1/2 tsp salt
1/4 tsp pepper

Grease a 9X13X2" casserole dish. Cover bottom w/ 2/3 bread crumbs and sprinkle on 1/2 cheese. Cover with ham, veggies, bread & cheese. Seperate bowl, beat eggs, add milk, salt & pepper. Pour into casserole dish mixture. Cover and refridge. overnight. Bake at 350 for 35-40 mins. Cover with foil during last part of baking to prevent browning.

Breakfast Casserole

1 lb sausage, crumbled, cooked & drained.
2c milk
1c grated cheddar cheese
1 tsp salt
8 eggs
6 slices bread cubed
1 tsp dry mustard

Mix all ingredients and pour into a greased 9X13 casserole dish. Cover and refridge. overnight. Bake uncovered for 35 mins. at 350.

Savory Eggs

2 c. cheddar cheese
1/4 c. butter
1 c. whipping cream
1/2 t. salt, 1/4 t. pepper
2 t. prepared mustard
12 slightly beaten eggs

Layer cheese in a greased, 9 x 13 glass baking dish. Dot with butter. Mix cream, salt, pepper and mustard. Pour half of this mixture over cheese. Beat eggs and pour in dish. Add the rest of cream mixture. Bake at 350 for 40 minutes.

(You can make this right before baking but I usually make it the night before so all I have to do in the morning is pop it in the oven.)

Since one of my boys doesn't like eggs, I also make a French toast casserole.

Night Before French Toast

1 - 10oz. loaf of French or Italian bread, cut in thick slices
8 lg. eggs
3 c. milk
4 t. sugar
3/4 t. salt
1 T. vanilla
1 t. cinnamon (optional)
2 T. butter cut in small pieces

Arrange bread slices in greased 9 x 13 dish. Mix remaining ingredients except butter and pour over bread. Dot with butter. Cover and refridgerate overnight. Bake uncovered at 350 for 45 to 50 minutes until bread is puffy and lightly browned. Let stand 5 minutes before serving.

Breakfast Casserole

Preheat oven to 350 degrees

1 Can crescent rolls or shredded potatoes, frozen
1 Roll sausage (use any flavor sausage, maple is very good)
2 C shredded sharp cheddar cheese
4 Eggs
¼ C milk
Salt and pepper to taste

Spread crescent rolls in 9x12 pan
Fry sausage and drain, crumble and put on top of rolls
Sprinkle cheese over sausage
Mix eggs, milk, salt and pepper
Pour egg mixture over cheese
Bake at 350 for 20 - 30 minutes or until firm

This one for over-night French toast is really good, too!

Blueberry Over night French toast
Servings: 8

12 slices day-old bread, cubed
16 oz cream cheese, diced
1 c blueberries, rinsed and drained
12 eggs
1/3 c maple syrup
2 c milk

1. Place half of the bread cubes into a lightly greased 9x13 inch baking pan. Scatter cream cheese over bread; sprinkle with blueberries. Place remaining bread cubes over the blueberries.
2. In a large bowl, beat together eggs, maple syrup and milk. Pour egg mixture over bread cubes. Cover pan with aluminum foil and refrigerate overnight.
3. The next morning, preheat oven to 375 degrees F (190 degrees C).
4. Bake, covered, for 25 minutes. Uncover and bake an additional 15 to 20 minutes, or until puffed and golden brown. Serve warm.

(Knew someone would post this one - just be careful of over fill, drippings down can cause major smoke - fire alarms... :rolleyes1)
Here's one straight from Disney...it's the Main Street French Toast Loaf!
French Toast Loaf

YIELD: 1 Loaf

Ingredients:

12 slices day-old white bread (preferably a homestyle white, not Wonder Bread
type)

8 oz. butter (chilled and sliced)

Brown sugar batch:

9 oz, light brown sugar
1 tsp. cinnamon

Mix together and set aside.

Batter:

10 oz. heavy cream
4 large eggs
1/2 tsp. vanilla
1/4 tsp. cinnamon

Mix together and refrigerate until ready to use.

Method:

Liberally spray a loaf pan with Pam or other vegetable spray. Layer three slices day old bread on bottom of pan. Sprinkle 1/3 brown sugar mixture on top of bread, then layer 1/3 of the butter. Repeat these steps two more times. Top off with three more slices of bread (should have a total of 12 slices of bread). Press down with hand to compact bread into loaf pan.

Slowly pour 16 oz. of batter over top of loaf, covering completely. This may take a little time, to allow it to fully absorb into bread and flow into spaces at bottom. (Take
your time here and pour into corners. Lift bread at corners a little to get into bottom quicker if you want.)


Place loaf pan on some paper towel in case of overflow. Cover top of loaf with parchment paper and wrap top tightly with aluminum foil. Place in refrigerator and allow to sit overnight.

Heat oven to 325º F. Bake for approximately 1 hour or until internal temperature in center of loaf is 160 degrees. Uncover and bake for another 15 minutes. Remove from oven and let rest for 5-10 minutes. Place a plate on top of loaf pan and invert to remove from pan. Cut into 7 slices and serve.

Ham & Hash Brown Casserole
Serves 4-6

2 pounds frozen hash browns
1 can cream soup (chicken or mushroom)
16 ounces sour cream
1 stick margarine
8 ounces shredded sharp cheddar cheese
1 cup chopped onion (optional)
1 ½ - 2 cups diced ham

Mix all ingredients together (except margarine) in a large bowl. Pour into greased 13x9-inch casserole.

Dot the margarine on top of the casserole.

Bake at 375º for 1½ to 2 hours – until golden brown on top and hash browns are tender.

Hash Brown Casserole presented by Haley Farm Bed & Breakfast and Retreat Center

One packet of frozen hash browns (shredded potatoes) 26 oz
1 medium onion chopped
1/2green pepper chopped
1 can mushroom soup
1 cup of milk
1 cup of grated cheese
1 Tablespoon of oil
Dash of hot sauce
Salt and Pepper to taste

You can prepare this the night before and cook it the next morning for brunch and you will be amazed at the compliments you get.

Saute onion and green pepper in oil. Add frozen shredded hash brown potatoes. Add can of condensed mushroom soup. Add milk and cheese. Add salt and pepper to taste and hot sauce. Cook for 4 minutes or so until everything is blended and put in a greased casserole dish (you can put it in the fridge at this point to bake later if so desired). Bake at 350 degrees for one hour (should be slightly brown on top).

Blintz Casserole presented by Beach Hut Bed & Breakfast

1 pkg frozen blintzes (crepes filled with farmer's cheese, fruit jams, etc., usually 6 per pkg)
1/2 cup sour cream
1 tsp vanilla
4 eggs
1/4 cup sugar
1/4 cup orange juice

Lightly coat a rectangular pan or glass casserole dish with butter or margarine. Place blintzes in single layer. Blend ingredients thoroughly and pour over blintzes. Refrigerate overnight. Bake for 45 minutes at 350 degrees.


Stuffed French Toast
24 (1-ounce) slices cinnamon-raisin bread
Cooking spray
3 cups 1-percent milk
2 cups egg substitute
1 cup half-and-half
1 cup sugar
1 tablespoon vanilla extract
1/8 teaspoon ground nutmeg
1 (8-ounce) block fat-free cream cheese, softened
1 (8-ounce) block 1/3-less-fat cream cheese, softened
Bottled cinnamon-sugar, optional

Accompaniment: Canadian bacon and mixed fresh fruit with chopped mint

Trim crusts from bread. Arrange half of the bread in a by 9 by 13-inch baking dish coated with cooking spray.

Combine milk, 1 1/2 cups egg substitute, half-and-half, and 1/2 cup sugar in a large bowl, stirring with a whisk. Pour half of milk mixture over bread in dish.

Combine 1/2 cup egg substitute, 1/2 cup sugar, vanilla, nutmeg, and cheeses in a food processor or blender; process until smooth. Pour cream cheese mixture over moist bread in dish. (you can also save half of this mixture for the top of the bread) Top with remaining bread; pour remaining milk mixture over bread. Cover and refrigerate 8 hours overnight.

Preheat oven to 350 degrees F.

Let the dish come to room temperature about 30 minutes. Uncover and bake for 55 minutes. Let stand 10 minutes before serving. Sprinkle with cinnamon-sugar, if desired.
 
Keep hoping I'll find the one we make - but I know no one will make it unless they taste it first - its from a contest winner years ago -My MiL makes it every year, I carry on the tradition, but my kids dont like it - it has a can of the crab, and cream cheese - and dill (I dont like dill, I only put it on half!) Its very savory - but havent found it yet!

Christmas Morning Strata: serves 6

1 cup broccoli florets cooked till tender
5 cups 1/2 inch bread cubes (8oz)
2 cups shredded cheddar cheese (8oz)
1 cup cubed cooked ham (6 oz)
3 beaten eggs
1 3/4 cup milk
2TBSP onion
1 tsp dry mustard
dash pepper

Layer 1/2 of bread cubes in a greased 2 qt dish
Top with cheese, ham and broccoli
Combine remaining ingredients
Pour egg mixture evenly
Cover and chill for 2-24 hours

Uncover and bake 325 oven for 1 hour or until knife comes out clean
Let stand 5 mins before serving.

Brunch enchiladas: serves 10

1 pound cooked ham, chopped
3/4 cup sliced green onions
3/4 cup chopped green bell peppers
10 (8 inch) flour tortillas
3 cups shredded cheddar cheese, divided
5 eggs beaten
2 cups half and half cream
1/2 cup milk
1 TBSP flour
1/4 tsp garlic powder
1 dash (or two) hot pepper sauce

Place ham in food processor and pulse until finely ground. Combine ham, onion, green pepper. spoon 1/3 cup of the ham mixture and 3 TBSP's cheese into each tortilla, then roll up. Carefully place filled tortillas, seam side down in a greased 9x13 baking dish.

Combine eggs, cream and milk, flour, garlic powder, and hot pepper sauce. Pour egg mixture over tortillas. Cover and refrigerate several hours or overnight.

The next morning preheat oven to 350.

Bake uncovered in a preheated oven for 50-60 minutes until set. Sprinkle with remaining 1 cup cheddar cheese. Bake until cheese melts. Let stand at least 10 mins before serving.

This is an incredible recipe...it was the one I was going to post. The one thing that I didn't see...you can make it the night before so you won't have any work on Christmas morning. It is perfect to just get up and pop it in the oven.

I have a bread machine and make up some white dough. Then I melt butter when the dough is done. Mix cinnamon and brown sugar in a bowl. Spray oil in a loaf pan. I take small bits of the dough and form balls and dip each in the butter and then roll in the cinnamon mixture. I leave a bit of room as the dough does expand a bit. Don't fill to the top of the pan as it will go over the edge when you bake. I fill two pans with my bread dough.

You can store in the fridge and cook the next morning or cook and then re-heat in the morning. I add some canned icning to put on the pull a-parts when warm.

This is pretty much how we make Monkey Bread. My mom has been making it for at least 30 years now but we always called it Bubble Bread. I don't like the recipe with the Pillsbury dough...I think they are way too heavy.

I usually buy premade loaves in the freezer section of the grocery store rather than making my own dough. Two loaves work great. Allow them to defrost and rise over night.

Then I use a greased bundt pan and rip off small chunks and roll in melted butter then a cinnamon/sugar mixture. I usually get 3 layers around. I always let it rise another hour or two before baking. The key is to pour a little extra melted butter over the top and sprinkle with some extra sugar mixture before putting in the oven (325 for 45 minutes or so). Sometimes I put walnuts or pecans in the pan first for the topping. Then you just pull off a ball or two at a time....NO CUTTING. That always drives me nuts :rotfl:
 
I use the Pioneer woman's recipe for Monkey Bread. Only thing I do different is half the melted butter that get's poured over because I find it came out a bit greasy with the original amount.

1/2 tsp dry mustard

Butter bottom of pan. Butter both sides of bread and cover bottom of 9x13 pan, cutting bread as needed. Sprinkle shredded cheddar over bread. Sprinkle
crumbled bacon over cheese. Mix egg, milk, salt and mustard and pour over bacon. Cover and refrigerate overnight. When ready to bake take out of fridge and let sit out for 30 minutes. Remove cover and bake at 350 for 30 minutes or until knive inserted in center comes out clean.
 
Mommy2- I use a bundt pan but I'm sure you could use something round. The bundt really only gets you more crunchy pieces bc it has more contact with the pan.

one tube of Pillsbury biscuits, the layer ones (but any may work)
Break the biscuit log into 1" pieces and roll them into balls
put balls into a large ziploc with about 1/2 cup sugar and 1/4 cup cinnamon
shake the sealed ziploc until the balls are covered with the mixture of sugar/cinnamon
place balls into PAM-sprayed bundt pan and pour 1/2 stick melted butter on top
Bake at 350 degrees for 30 minutes, or until browned

That recipe is very similar to the Wife Saver one my mom does for Christmas morning. The only difference I notice is that her's has ham (no bacon) and it's topped with corn/special K cereal. I don't have the recipe to compare the exact amounts.

I won't eat it. That's why I started making Cinnamon Pull a-parts so I had something yummy to eat in the morning.
