I'm headed to the parks in March with my sister and her family, but I'm not yet sure if my husband can get 1 or both days off work to join us. If I book a table service meal for us. Am I better off booking for all 6 and showing up with 5 (do I get the $10 no show fee) or book for 5 and turn up with 6 (will it extend our wait time)?

Book 6. They will not charge you the fee so long as any part of the party shows up.

How soon will you know if DH can join? Is book for 6 and change to 5 if needed within the change window. That way you know you'll have space for everyone. Sometimes 5 will mean a booth for 4 with a chair on the end.

Won't have a problem either way. As op said, they won't charge you the $10 if you have some of your party there. Also, with 5 people they will put you at a six top anyway. If you were four and showed up with five that could potentially be a problem because they would have a four top reserved for you... The only five top I guess might be a round table but there aren't many of those and you can always squeeze and extra chair at one.

Thanks all! I'll book for 6 and change down if/when I know :)

I concur, book for six. It's always easy to remove a person than it is to add someone at a later date. As long as someone honors the ADR, you won't be charged the no show fee for the people that don't make it. The only places where you'll probably want to remove him from the reservation if he can't go is at the pre-paid locations (e.g., CRT).

You can try showing up with an extra person, but there is always the off chance that they won't be able to seat the person. It's very uncommon, but not impossible, that the restaurant will be at capacity (fire code) and unable to accommodate an extra person. It's also possible that your party was assigned to a table that seats an odd-number of people, so adding someone will mean being assigned to a new table and it might increase you wait time. I can't speak for 5-tops specifically, but I know a few venues that have 3-tops, so parties of three aren't always seated at a four top. It's possible that the same issue exists for any odd numbered parties.
