Booked the trip! Now please some questions since it's been a while...

Just booked our trip for next June! We are doing a studio this time as it is only me, DH and my son who will be 16. My original choice (GF lake view) was booked two nights in the middle of our stay, as was my second choice (BLT theme park). So for the last hour I debated BLT lake view (which we have did in 2012) or BWV,which we haven't stayed in since 2002! DH and DS had previously said they'd be happy with either. So my choice was....
BWV boardwalk view! They both love Epcot and DHS. I love MK, but I figure even if the busses are horrible, we can just catch a cab over there one or two days at open. Plus since parks open later in June than spring break we won't need to get up at the crack of dawn!
Now forgive my ignorance, as we have been going to WDW since 2000, but our last trip was April 2012 and we have not purchased dining plan since 2010 or APs since 2002, so I have a few questions in light of the FP+thing.
1) I am trying to convince DH to buy APs since we get a great discount and are going back April 2015. We call and get vouchers which we redeem at a park on our first day, correct? How long can we wait to do this? I know we have to do it before 60 days out to use our FP+ options.
2) Is it still policy that you can book the dining plan up to 48 hours before travel? Can you pay for that at check-in or when you book?
3) is there a list somewhere of what the FP+ options are? I am a little bummed about the limit of 3, since we have always made excellent use of FPs even when we had to return in time. Our will probably be rides, except maybe the new MK parade one day. The good thing about BWV, I think, is that we can go to a park and use our FPs, and then we have two park options to go to with our APs where we can soak in the scenery and hang out if no FPs are available.
Thanks for the reminders! I'm hugely excited and looking for airfare, and even that is decent ($250 on Delta).

The buses are fine. They share a route with other resorts, but we have never had an issue.

The parks do not open later in June. 9:00 is still standard opening time with parks opening at 8:00 on their Extra Magic Hours mornings.

Yes, you redeem them at a park or Downtown Disney Guest Relations window. You can hold on to vouchers as long as you want to. There is no expiration date. You do not need to redeem them to make FP+ selections. Just link your vouchers to your MDEx profiles and you will be all set.

I think it is 72 hours before and must be paid for when booked. We never buy the dining plan so perhaps someone else will confirm.

Have you considered getting the Tables in Wonderland card instead? We find it to be a much better deal than the meal plan. Another benefit is that it is good for 13 months so you could use it on your 2015 trip as well.

FP+ is now available at nearly every ride/show, including parades and fireworks.

You actually have three park options after your first. There are four parks.

The parks are open later at night, just for clarity in case that's what they were referring to.
 

I am sorry that was confusing. The last four trips were spring break trips, and we went to MK for 7AM opening. So for us, 9AM is later! I've been rousting everyone at 6 for those days. I have some amusing photos of the kids sleeping at the bus stop.
And what I meant about the park options....I know there are 4 parks, but since we will be at BWV, we have two very accessible places to go (Epcot and DHS) if we get done with one park and just want to hang out somewhere else, whether or not we have FPs. We could go to MK, spend most of the day there, then go eat or people watch at one of those places, still being really close to our resort.

And be prepared for tiered FP's. They are implementing that in the testing phase now so essentially only one headliner and the other 2 are attractions that typically haven't even had FP's. It's at Epcot and DHS and I think going to include all parks unless (fingers crossed) they decide to scrap that idea after this testing phase.
 
That would totally suck. We made so much use out of FPs! There are some rides that just aren't worth the time, FP or not.
