Do they still have the Boardwalk entertainment at night? Is it only on certain nites - was looking at Sunday in May. And you can grab a bite at the pizza window or Boardwalk cafe if you can't get a ressie for one of the restaurants, correct? Which restaurants do you recommend? Is that new Italian one worth it?

Yes, there is still entertainment. I don't believe there is any schedule but we stay there frequently and as long as the weather is good there has been entertainment every night that we have stayed.
Can't comment on the new restaurant but we like the Big River Grille and ESPN. (I am not recommending them for Italian food though) Hopefully someone else can fill you in on that question.

The Bakery and the pizza window are both quick service- so no reservations. Easy enough to grab a meal either place if that is what you want. IIRC, it is not difficult to get a seat at either Big River Grille or ESPN without a ressie either.

As for Trattoria, we have a reservation for both breakfast and dinner on our upcoming trip. We loved the breakfast at Kouzzina, and the Trattoria breakfast looks similar enough to make us happy. Glad they kept the press-pot coffee- it is so good! Not sure on dinner, but the reviews have been decent enough and we’re willing to give it a shot. I would recommend an ADR, but it should be an easier one to get.

As PP mentioned, the entertainment seems to be a nightly thing as long as there is no rain. I think it is done by 9 pm, though? Not sure- it seemed to end earlier than we had expected a few nights.

We really like Trattoria! We've eaten there twice for dinner and it was very good. If you can't get reservations, the QS options on the Boardwalk are quite good as well. Boardwalk Bakery has great soups, salads and sandwiches. The pizza is also very good. They also have hot dogs, hamburgers, etc. at another stand. We've never eaten at ESPN, but Big River was pretty good. There are also some great restaurants at Swan/Dolphin (bluezoo, Il Mulino, Kimono's) which is only a short walk from the Boardwalk.

I agree with this post. Add Shulas & you have the best restaurants at WDW, with the exception of V&A, a short walk away. IMHO, the S/D restaurants are the elite of Disney restaurants in their respective category.

Disclaimer: I haven't eaten at the buffet there, so I don't have an opinion on that.
