I'm using RideMax the itinerary software for planning our trip to Disneyland.
It doesn't have wait time information for dinner reservations or shows.

We have a reservation for Blue Bayou at 7:20 pm, how much wait time should I plan for, and how much actual eating time/time we will be in the restaurant.

We reserved seating for fantasmic, how early should we arrive for that?
Are we able to have one person saving our seats while we go do other things or do we have to stay put as soon as we arrive?

My hubby waited in line for over an hour for our fantasmic seats. Once he booked us in, he left and joined us to play. We then came back a little bit before the show to sit in our reserved seats.
 
Coming from a Fantasmic reserved seating veteran, you may wanna consider some adjustments to your schedule. Read up on the Fantasmic treads that are already posted, but check in for BOTH shows starts at 8pm at the kiosk by the churro cart. You will wanna line up by 7:30 at the latest if you want good seats (meaning not third row, but they are all pretty good seats relatively speaking), or closer to 7 or 7:15 if you want front row. The main reason for an earlier reschedule of dinner is that the desert box is a LOT of food and goodies and you won't be able to enjoy but a fraction of it of you are stuffed from Blue Bayou, which is also a lot of food. Perfect timing for me is usually Blue Bayou reservations at 6 or 6:30, done by 7-7:30, stand in line and check in (and digest) for 8p check in, grab seats any time up to 30 min before your show...and enjoy!

Once you check in and reserve your seats, they are yours, you can show up whenever (up to 30 min before show) and come and go as you please...and only one person really needs to check in with the tickets, not the whole party.
